  • For potato pancakes, only old potatoes are suitable, in a young one there is not enough starch and pancakes will simply crumble in a pan;
  • If the potato mass turned out to be too liquid, squeeze the juice, the pancakes will turn out to be drier, but still tasty;
  • Do not rash a lot of flour, it will spoil the taste of the pancakes;
  • For a more interesting taste, you can add greens, fried onions, various spices;
  • Some housewives, often instead of grated potatoes, make mashed potatoes and, adding flour, prepare a soft dough. From the resulting mass, pancakes are made by frying them in sunflower oil.

You will need: 1 kg of potatoes, 300 grams of granular cottage cheese, two eggs, one onion, vegetable oil, spices and salt to taste. Peel and chop raw potatoes with a blender or grate them on a fine grater, add chopped onions, mix and squeeze out excess juice. Add eggs, cottage cheese, salt to the mass, season with spices, mix. Spread the dough with a tablespoon in a skillet with butter and fry on both sides until golden brown.
