Foods not to be frozen

Freezing is a very convenient way to store food and also to avoid waste. When you’re a parent and spend a lot of time making mini-portions, this can be really helpful. However, you should know that not all foods are suitable for this method of preservation. Here is the list of products that should be avoided in the freezer. And as a reminder, if you are a fan of freezing, always make sure to pack the products you freeze well, specifying the date of freezing. The ideal place to defrost food is in the refrigerator. And remember that you never refreeze a product that has already been frozen.

    Raw eggs in shell

    Are your eggs soon to be expired and wondering if you can freeze them? The answer is no. The egg cannot stand freezing at all, the cold can cause it to burst. So tonight, go for an omelet.

    Fresh and soft cheeses

    Again, it should be avoided. Cheeses such as ricotta, fresh goats, brie, contain a high amount of water. By freezing them, you add more moisture. When defrosting, the appearance and taste of your cheese may be greatly altered. On the other hand, for hard pasta, no problem.

    Fruits and vegetables that contain a lot of water

    It is the same for certain fruits and vegetables which contain a lot of water such as cucumber, tomatoes, melon, watermelon, lettuce or many leafy green vegetables.

    Potatoes

    You thought you could freeze your potatoes which are starting to look gray. We do not recommend it. When defrosting, they will all lose their crunchiness. Note that as a general rule, it is best to blanch fruits and vegetables before freezing them and even better to cook them beforehand.

    Fried foods

    Avoid putting fried foods in the freezer. Freezing damages their texture and taste. However, you can freeze them before frying them!

    Offal

    As much as a good steak can be completely frozen, organ meats such as liver, kidneys and brains cannot withstand low temperatures at all. When defrosting, these foods may lose their flavor and hold.

    The mayonnaise

    Mayonnaise is a product that does not tolerate freezing well. By defrosting it, excess water can modify its consistency and therefore its taste.

    Molds

    To preserve the mussels, you can freeze them, as long as they have been cooked beforehand. The simplest: put them for 10 minutes in boiling water. You can then freeze them shelled or with their shell.
