3 ways to cook lightly salted cucumbers in 5 minutes

The first seasonal vegetables have already appeared in supermarkets and markets, and the aroma of fresh herbs makes you want to immediately buy everything and cook crispy pickled cucumbers. After all, this is the best picnic snack and a pleasant variety on the table. Specialists of the BILLA chain of stores told how to cook such cucumbers without wasting a lot of time.

5 tricks of salting

First you need to buy cucumbers. Or, if you are the lucky owner of your own site, collect. And then follow the most important salting rules:

– choose small cucumbers with pimples and always the same size;

– Before cooking, soak the cucumbers in cold filtered water – this will help them stay strong and crispy;

– always trim the ends: this will help to save salting time and get rid of nitrates;

– do not put a lot of cucumbers in one container, otherwise they will lose their crunchy properties;

– The brine needs air to ferment, so do not close the bowl or jar too tightly.

Of course, any of our recipes can be diversified by adding oak leaves, green anise umbrellas or tarragon in addition to classic greens. Be sure to store ready-made cucumbers in the refrigerator.

Important!For cooking, it is better to take coarse salt, but not iodized salt.

Recipe 1. Cucumbers with sugar

Ingredients:

  • Cucumbers – 1 kg

  • Salt – 1 tbsp l.

  • Sugar – 1 st. l.

  • Vinegar (9%) – 1 tbsp. l.

  • Dill – 100 g

  • Garlic – head

  • Pepper, parsley and celery to taste

We wash vegetables and herbs thoroughly. Cut the cucumbers into slices about 0,7-1 cm thick and put them in a saucepan. Chop the dill (and all the other greens to your taste) and add to the cucumbers. We clean the garlic, crush it with the wide side of a knife, chop and send it to the pan. Add salt, sugar and vinegar, mix and leave for 1,5-2 hours at room temperature.

After the cucumbers are soaked, you can put them in the refrigerator and take them out just before serving.

Recipe 2. Cucumbers in a package

Ingredients:

  • Cucumbers – 1 kg

  • Salt – 1 tsp..

  • Greens (dill, parsley, in the summer season you can add currant, cherry or horseradish leaves)

  • Pepper, bay leaf, paprika

  • Garlic – 2-3 cloves

We wash the cucumbers thoroughly, cut off the ends on both sides and cut them into quarters. Finely chop the dill and garlic, put it together with the cucumbers in a bag, add salt, bay leaf, paprika and hot pepper. Mix everything right in the bag, tie it loosely and leave it in a bowl for about an hour. After that, so that the cucumbers are perfectly crispy, we send them to the refrigerator for 2 hours.

Recipe 3. Cucumbers on soda

Ingredients:

  • Cucumbers – 1 kg

  • Sparkling mineral water – 1 l

  • Dill and garlic to taste

  • Salt – 2 tbsp l.

My cucumbers, cut off the ends on both sides. Wash and dry the dill, peel and crush the garlic with the wide side of a knife. At the bottom of the container we put part of the dill with garlic, then the cucumbers, and then the remaining garlic and dill. Dissolve salt in mineral water, fill cucumbers with herbs with the resulting brine. If desired, the recipe can be supplemented with any seasonings to taste. Gently cover the cucumbers with a plate or lid and leave in a cold place for a day.

These cucumbers are perfect for potato, fish or meat dishes. In addition, they can be served with an omelet or added to salad, okroshka and sauce, even to pizza.
