3 options for making spring rolls

Spring rolls are a Vietnamese dish and are widespread in Korea, China and Japan. In Russia, they learned about them relatively recently. Spring roll is the general name for a wide variety of fillings wrapped in a sheet of rice paper. Actually, it is the main ingredient. Spring rolls have traditionally been prepared with shrimp and other seafood due to their availability in Asian countries. Now the situation has changed and we have at our disposal all, well, almost all products, so spring rolls can be prepared with meat, vegetables, and even sweet ones.

 

The process of making rice paper is laborious and good paper cannot be cheap. A few words about how to choose paper for spring rolls.

  • First and foremost, it must be whole. It is desirable that the sheets are thin, transparent, without chips and cracks, otherwise, after soaking, all the cracks will “creep” and it will be very difficult to wrap the filling.
  • Second, pay attention to the composition. Rice paper should contain rice flour, water and salt.
  • And third, the thinner the rice paper, the better. It is easier to work with it, it absorbs water well and folds easily, keeps its shape and does not break.

Recipe 1. Vegetable spring rolls with avocado

Cooking vegetable spring rolls is as easy as shelling pears, but there is one caveat. Slicing is very important here. All vegetables should be thinly sliced, it is desirable that they are of different contrasting colors, then it will also turn out beautifully.

  • Avocado – 40 g.
  • Bulgarian pepper – 1/2 pc.
  • Olives – 3 pcs.
  • Cucumber – 1 pcs.
  • Rice paper – 30 gr.
  • Salad – 5 gr.
  • Cream cheese – 2 tablespoons
  • Water – 10 ml.

How to make vegetable spring rolls:

The first thing to do is cut the bell peppers and cucumber into thin strips, if the avocado is very ripe, it can be cut thicker. Cut olives into slices – in this recipe they are more for decoration. Moisten a sheet of rice paper with water at room temperature. He should become soft and pliable. Next, transfer the rice paper to a dry surface. It could be a board or another plate. Then spread the lettuce and chopped vegetables, avocado and cream cheese. Well, if the cheese is in the middle, it will hold all the ingredients together (calorizator). Fold the roll in half and lay out the olives. We fold the roll to the end, like a cabbage roll. Of course, you can put olives in the middle, but then they will not be visible. The recipe is very simple, and the rolls will definitely turn out bright and beautiful.

Recipe 2. Spring rolls with chicken and mushrooms

Spring rolls with chicken and mushrooms turn out to be hearty, they are high in protein, but at the same time they are low in calories and are suitable for any diet, even for dinner. The main thing here is not to overdo it with the sauce.

  • Chicken fillet – 100 gr.
  • Champignons – 3 pcs.
  • Zucchini – 100 gr.
  • Bulgarian pepper – 1/2 pc.
  • Carrots – 1 pieces.
  • Salad – 5 gr.
  • Soy sauce – 2 tablespoon
  • Spices – 1 tsp
  • Olive oil – 1 tsp
  • Rice paper – 30 gr.
  • Cream cheese – 2 tablespoons
  • Water – 10 ml.

How to make spring rolls with chicken and mushrooms:

The preparation of these rolls takes a little more time. As in the first option, you need to cut the vegetables into strips, but not too thin, the thickness should be 1-1.5 cm. Transfer the chopped vegetables to a baking sheet covered with parchment, sprinkle with spices and sprinkle with oil. We send to the oven at 200 degrees for 10 minutes. Now you can do chicken and mushrooms. They need to be thinly sliced, put in a pan and add soy sauce. Let stand for 10 minutes and then fry in its own juice. You don’t have to add salt, soy sauce will add a pleasant shade and a salty taste. When all the ingredients have cooled down, you can start assembling the roll. Soak rice paper in water, put mushrooms, lettuce, cream cheese, vegetables and chicken. Roll up like a cabbage roll.

Recipe 3. Spring rolls with shrimps

Shrimp looks beautiful in spring rolls, goes well with fresh vegetables and cream cheese. Cooking these spring rolls is as easy as cooking vegetables, with the only difference that you have to spend time peeling the shrimp.

  • Shrimp (boiled-frozen) – 70 gr.
  • Rice paper – 40 gr.
  • Carrots – 1 pieces.
  • Avocado – 40 g.
  • Cucumber – 1 pcs.
  • Cream cheese – 2 tablespoons
  • Salad – 5 gr.
  • Water – 15 ml.

How to make shrimp spring rolls:

First of all, let’s prepare the shrimp. They are boiled-frozen, so you just need to pour boiling water over them, leave for a couple of minutes, and then free them from the shell. Cut the carrots, cucumber and avocado into strips, as in the first option. And then everything follows the old scheme: soak the rice paper, lay out the filling: lettuce, cream cheese, vegetables, fold the roll in half, lay out the shrimps beautifully and roll the roll to the end.

There are many ways of folding spring rolls: they can be made open by folding like an envelope, they can be folded like a cabbage roll and cut in half when serving (calorizer). Can be folded into a tight oblong roll, carefully wrapping the edges. Some chefs even deep-fry spring rolls, but we will not do this, because the calorie content will increase significantly.

Spring roll peanut sauce

This sauce is made with peanut butter. It turns out to be very high in calories, but very tasty and unusual. You can change the number of ingredients for this sauce to your liking, there are no clear frameworks and rules.

  • Lemon juice – 2 tablespoon
  • Ground black pepper – 1 tsp

You can surprise the whole family with such a sauce, serving it not only to spring rolls, but also to any vegetables, you can fill salads with it and prepare morning toasts with it. Soy sauce for spring rolls

This sauce tastes like a cross between teriyaki sauce and spicy tomato ketchup. It is very tasty and also goes well with many dishes and as a marinade for vegetables and grilled cheese.
