Zucchini for the winter marinated in white wine – Italian recipe

Marinated zucchini in white wine is a versatile crunchy snack that is prepared without sterilization and stored for about six months without losing its qualities. The taste and aroma of the dish is much more pleasant than ordinary canned zucchini.

For cooking, dry white wine of the middle price segment is suitable. It is important that the drink does not contain flavors and dyes that are added to the cheapest wines. It is advisable to use zucchini with a mature peel, then the appetizer will have a signature crunch.

Ingredients:

  • zucchini – 1-2 pieces;
  • white dry wine – 250 ml;
  • vinegar 6% (preferably wine) – 100 ml;
  • lemon zest – from half the fruit (optional);
  • vegetable oil (olive or sunflower) – up to 200 ml (depending on the volume of the jar);
  • garlic – 1-2 cloves (optional);
  • seasonings and spices (oregano, basil, mint, black pepper, coriander, paprika, etc.) – to taste;
  • salt – to taste.

1. Cut the tops of the zucchini, cut the vegetables lengthwise, then remove the core with a spoon or knife – seeds and white pulp in the center. You should get “boats”.

2. Cut the zucchini into slices 1-1,5 cm wide.

3. Pour dry white wine and vinegar into a saucepan. Add salt and lemon zest cut from half of the fruit (without the bitter white pulp).

4. Bring the marinade to a boil. Add the zucchini to the marinade in small batches so that they float freely and do not touch the bottom.

5. Boil each batch of zucchini in wine for 3 minutes over medium heat, then remove from the marinade, dry with paper towels, cover with a clean cloth and leave to dry for 8-12 hours.

6. At the bottom of a glass jar for conservation, add half of the seasonings and spices. Put the zucchini, add the second part of spices and seasonings on top, then a few cloves of garlic and mint leaves (basil).

7. Pour in vegetable oil (should completely cover the zucchini), close tightly. Leave at room temperature for 4 hours, then add vegetable oil (some will be absorbed by zucchini) so that it completely covers the vegetables by at least 1 cm. Seal the jar tightly.

8. Transfer the zucchini marinated in wine to the refrigerator. After 1-2 hours the dish is ready. Shelf life in the refrigerator is up to 6 months.
