For some, it is unthinkable without a large amount of carrots, while others love a rich tomato flavor. But in any case, this preparation is not only tasty, but also useful. Almost all vitamins and a very rich mineral composition with a low calorie content makes this product indispensable. And the ease of preparation and a small assortment of inexpensive products that are required for this will appeal to any hostess.

Usually zucchini caviar is prepared with the addition of tomato paste. But not everyone likes its taste. You can replace it with fresh tomatoes. If they are contraindicated for health reasons or simply are not your favorite vegetable, you can cook this blank without tomato ingredients at all. Spices will add spiciness to this dish, and vinegar or citric acid will give a pleasant sourness, which gives not only taste harmony, but also does not allow the product to deteriorate during storage.

This preparation can be done quickly, the cooking process itself is simple and even novice cooks can handle it. The set of products is minimal.

For 3 kg of zucchini of any degree of maturity, you will need:

  • carrots – 1 kg, you can take large vegetables;
  • Bulgarian sweet pepper – 4 pieces, medium size;
  • onions – 600 g;
  • garlic – 10 cloves;
  • salt – 1 tbsp. a spoon;
  • black ground pepper – 1 teaspoon;
  • lean refined oil – 200 ml.

All vegetables, except for onions and garlic, are washed, peeled, cut into small pieces and boiled until soft.

Advice! To preserve vitamins as much as possible, vegetables should be put in boiling water. She only has to cover them.

Cut the onion into half rings and fry in oil until golden brown. Grind all vegetables together with onions to a puree state using a meat grinder or blender.

In the bowl in which the caviar will be cooked, put the vegetables, season them with pepper, salt and chopped garlic. Cook for approximately 40 min. The fire must be small. Do not close the pan with a lid so that the liquid evaporates and the vegetable mixture can thicken.

Attention! Stir the vegetable mixture often so that it does not burn.

Immediately after preparation, we pack the caviar in sterilized, always dry jars and cork with sterile lids. Banks with this blank must be insulated for 24 hours.

If there is no cool room for storing canned food, so that the caviar does not deteriorate better in each jar, add a teaspoon of 0,5% vinegar with a volume of 9 liters, add 2 tablespoons to a liter jar.

  • onion – 0,5 kg;
  • refined lean oil – 100 ml;
  • sugar – ¼ cup;
  • salt – 2 tbsp. spoons without a slide;
  • vinegar 9% – 2 tbsp. spoons;
  • hot red ground pepper – a quarter of a teaspoon;
  • mayonnaise – 1 pack weighing 250 g.
Advice! For harvesting, mayonnaise with a high degree of fat content is needed.

Even very young zucchini are best freed from the skin. Cut them into medium-sized pieces and boil in water for half an hour.

Advice! At the beginning of cooking, the zucchini should be slightly more than half covered with water.

When stirred, they will quickly settle and become completely covered with water.

While the zucchini is cooking, cut the peeled onion into medium cubes and fry in vegetable oil, you do not need to brown it.

Drain the water from the zucchini, add onions to them and turn the vegetables into puree in any convenient way. Add to it all the other components of caviar and cook everything together. The cooking process is long, it takes 2 hours, but if you cook less, the workpieces may deteriorate.

Advice! You need to stir such caviar very often during the cooking process. The fire should be small.

The vegetable mixture is packaged with mayonnaise immediately after preparation. Banks must be dry and sterilized. The same applies to the lids with which we roll up the banks.

Attention! For this workpiece, it is better to take small dishes, for example, 0,5 liter jars.

The following recipe does not even have vinegar, but there are greens. It not only enriches the workpiece with vitamins, but also gives it a special taste.

For 1,5 kg of zucchini you will need:

  • carrots – 100g;
  • onion – 100 g;
  • parsley – 20 g;
  • sprigs of dill – 10 g;
  • vegetable oil – 80 ml;
  • sugar and salt 1 tbsp. a spoon with a small slide;
  • Season with ground black pepper to taste.

The cooking process is very simple. All vegetables are washed, peeled, cut into pieces and fried in oil.

Grind with a meat grinder. Add finely chopped greens and all other components of the recipe. Simmer the vegetable mixture for half an hour. Since we do not add vinegar to the workpiece, jars filled with caviar will have to be sterilized. Do this for 35 minutes in a water bath with a barely visible boil of water.

  • tomatoes – 0,5 kg;
  • garlic – 4 cloves;

  • flour – 2 tbsp. spoons to make a slide;
  • sugar and vinegar 9% – 1 tbsp. spoon
  • salt – 1,5 tbsp. spoons.
Advice! To make the preparation tastier, you need to choose ripe tomatoes with a high sugar content.

We cut the onion and fry it in vegetable oil. Use a blender to chop tomatoes.

Three carrots and add it and tomatoes to the onion. Fry everything together over medium heat for about 20 minutes. Cut the peeled zucchini into small pieces and send to the rest of the vegetables. Add salt and simmer covered for about 40 minutes. The fire must be small. Remove the lid and let the liquid boil. This will take approximately half an hour. To chop the garlic, add half a tomato to it.

You can do this with the juice from the workpiece. Add flour, mustard and a tablespoon of water to the garlic, mix well. The resulting slurry must be added to the vegetables. At the same time, season the dish with sugar. Let it boil for a minute.
