After the vegetables are prepared, they need to be finely chopped, and then passed through a meat grinder or chopped with a blender, adding salt.
Zucchini caviar without frying, the recipe of which we described, turns out to be very tender and not at all greasy. After all, vegetables fried in oil are saturated with vegetable fat, and caviar is more oily.

In addition, you need: zucchini 2 kg, carrots 1 kg, spices, tomato sauce 0,5 l, sugar 3 tbsp. spoons, vinegar, onion.
Cut the onion, main ingredient and carrot into medium cubes and pass through a meat grinder or blender.
After that, the vegetables should be put in a saucepan, salt, pepper, add sugar and let the vegetables boil. After that, the fire must be reduced and left to languish for about two hours.
Next, add tomato sauce, the remaining spices and mayonnaise.
When the caviar reaches readiness, it is laid out in sterile jars and rolled up. Banks need to be stored upside down for the first time, and then they are placed in a cold place.

This zucchini pasta recipe comes without oil. We will need:
- zucchini – 1,5 kg;
- carrots 1 kg;
- tomatoes 1 kg;
- onion 0,5 kg;
- greenery;
- salt.
First you need to peel the zucchini, but if the vegetable is young, then you can not do this. Cut the zucchini into cubes and place in a bowl.
Next, throw in the pan grated carrots on a fine grater.
Now you need to process the tomatoes with boiling water, finely chop them and send them to the rest of the vegetables. We also send finely chopped onion there.
Now all the ingredients need to be simmered for about 40 minutes until they are fully cooked.
Zucchini appetizer is served ready-made, in the same way that you got it in a saucepan or you can grind it with a blender.

Zucchini paste can be cooked in a slow cooker. This recipe calls for: 2 kg zucchini, 750 gr. tomatoes, 400 gr. onion, 250 gr. carrots, tomato paste 2 tbsp. l, oil 2 tbsp. l, spices.
Preparation: Approximately 4,5 liters are placed in a slow cooker. Vegetables shrink during cooking, so they will all fit in the container.
First, pour boiling water over the tomatoes so that you can remove the skin from them. Now you need to chop the onions and vegetables. We put the “baking” mode and fry the onion a little until it is transparent. Now you can add carrots and stew them a little.
Now add the diced zucchini. Do not forget about the tomatoes, peel them and cut them into cubes, after which we send them to the rest of the vegetables.
Add the tomato paste after the tomatoes and mix everything well.
Now it remains to wait for the complete preparation of squash pasta. After that, it must be cooled and chopped with a blender. After that, it can be rolled into a glass container.
If you are making a vegetable snack for children, then it is not necessary to add tomato paste to it. An appetizer in a slow cooker turns out to be quite tender and very tasty, and most importantly, low-calorie.
