On the eve of summer, we talked with a friend about plans for a vacation. “It’s time for cold soups, come to our dacha for okroshka!” She called. This summer soup by her dad is delicious, and the thought makes my stomach growl. Therefore, we decided not to wait for June, but to cook the dish ourselves. However, after the May holidays, the refrigerator turned out to be empty, so I had to go for groceries. It was then that an unpleasant surprise awaited us. 

The main ingredients for this simple and seemingly cheap dish cost us more than 700 rubles! Apart from mustard and horseradish.

A pound of potatoes by weight – 40 rubles. Another 70 rubles cost 400 grams of cucumbers. For a set of greens (onions, dill, parsley) I had to pay 84 rubles. Almost the same for a dozen eggs. They paid 1,5 rubles for 70 liters of kvass. The most unpleasant discovery was the radish. In the store, he was alone, red, in a package of 500 grams and cost 125 rubles. Only sausage came out more expensive: on average, prices for 400 – 500 grams vary from 150 to 400 rubles. We chose the doctoral program for 249 rubles. Okay, let’s say you can take the cheapest sausage sliced, while greens, cucumbers and radishes can theoretically be found cheaper on the market. But not every house has a market nearby.

Evolution of okroshka index

Recovering from the shock, I decided to find out since when the popular cold soup has grown so much in price. It turned out that last year the price of okroshka increased by 6% compared to 2019. The cost of the dish was calculated based on its classic recipe: radish (230 g), potatoes (400 g), eggs (5 pcs.), Cucumbers (300 g), boiled sausage (300 g), sour cream (230 g), kvass ( 1 l), onion and dill (a bunch of each). On average, such a set for making okroshka in the summer cost Russians 459 rubles. As noted “News», the reason for this was the restrictive measures introduced due to the coronavirus pandemic and the fall in the ruble exchange rate. By the way, even 3 years ago, in 2018, all these ingredients did were worth about 380 rubles. However, a year later, their value increased by almost 10%.

How did the cost of products change?

According to Rosstat data, in May 2016 years, on average, products for okroshka in Moscow cost:

  • Potatoes, 1 kg – 26,46 rubles

  • Fresh cucumbers – 142,3 rubles

  • Chicken eggs, 10 pcs. – 73,91 rubles

  • Boiled sausage, 1 kg – 513,27 rubles

In May, the 2020

  • Potatoes, 1 kg – 31,69 rubles

  • Fresh cucumbers – 125,5 rubles

  • Chicken eggs, 10 pcs. – 78,53 rubles

  • Boiled sausage, 1 kg – 600,72 rubles

In March, the 2021 the price has risen to: 

  • Potatoes, 1 kg – 37,86 rubles

  • Fresh cucumbers – 185,06 rubles

  • Chicken eggs, 10 pcs. – 86,17 rubles

  • Boiled sausage, 1 kg – 625,92 rubles

Note that the increase in prices for certain types of fruits and vegetables (in comparison with April 2020) for potatoes was 7,2%. Chicken eggs have risen in price on average in Russia by 6,8%.

What else are prices going up for?

According to Rosstat, prices in Russia also increased for beets (by an average of 20,1%), carrots (9,6%), mayonnaise (3,0%), beef liver (2,7%), buckwheat (2,3 , 1,9%), granulated sugar (3,0%), mayonnaise (1,8%), margarine – by 1,7%, lamb (except for boneless meat), peas and beans (2021%) and some others products. At the same time, in general, food inflation in Russia in January 8,2 amounted to 7,5% – 1,1 times more than in the countries of the European Union. There, food prices rose by only XNUMX%.

Reality is worse than statistics

However, during a shopping trip, one gets the impression that this is not at all about 1, 2, 3%. Even if you find potatoes at a price of 35 rubles per kilo, they will already be packed in a net and clearly weigh more than a kilogram. It seems to be profitable, but there is, as they say, a nuance. I’ll carry this bag home, and lonely granny?

But what about the size of the living wage. In 2021, it is 18 rubles per capita, for the working-age population – 029 rubles, for pensioners – 20 rubles, for children – 589 rubles. Maybe it’s time to start your own vegetable garden on the windowsill?
