Yeast-free dough: recipe. Video
The dough for pies and pizzas, pies and donuts turns out to be soft and fluffy even without the use of yeast, while it cooks very quickly and always succeeds. Treat yourself and your loved ones with fragrant pastries made from tasty and healthy yeast-free dough based on kefir, sour cream and milk.
Unleavened dough for pies
Ingredients: – 250 ml of kefir; – 120 g of butter; – 4 tbsp. flour; – 2 tsp. baking powder; – 0,5 tsp. salt.
Take out the butter, cut it into cubes and soak for 40 minutes at room temperature until softened.
Never melt the butter in the microwave or in a water bath, otherwise the dough will turn out to be greasy.
Sieve flour through a sieve to enrich it with oxygen. Combine both ingredients in a blender or mixer bowl and beat on medium speed. Pour kefir into a separate bowl, add salt and baking powder, stir until the bulk products are completely dissolved, then add to the oil-flour mixture.
Stir everything first with a spoon, then with your hands, knead a soft elastic dough. Form a lump out of it, place in a deep bowl, cover with plastic wrap and refrigerate for 40 minutes.
Simple unleavened dough without yeast for pizza
Ingredients: – 1 tbsp. milk; – 2 chicken eggs; – 2,5 tbsp. flour; – 0,5 tsp. salt.
Prepare a pile of flour on a table or in a convenient container. Make a groove at the top and put all the other components there. Knead the dough for at least 15 minutes, until it stops clinging to your hands and becomes firm. Rest him in a warm place for 20 minutes and roll it into a large flatbread.
Dough without yeast for pies and whites
Ingredients: – 200 g sour cream; – 1 chicken egg; – 3 tbsp. flour; – 1/3 tsp each. soda and sugar; – 0,5 tsp. salt.
Mash an egg, mix it with sour cream, season with sugar and salt. Put the baking soda in 1 tbsp. flour and pour into the resulting liquid mass. Mix it thoroughly, add another 1 tbsp. flour, stir again. Use the leftover flour to knead the dough on the table. It should remain soft, but no longer stick to your hands. Roll a sausage out of it, cut into pieces, make juices with a diameter of 5-6 cm and wrap the selected hearty filling in them.
Yeast free dough for sweet donuts
Ingredients: – 500 ml of kefir; – 1 chicken egg; – 1 tsp. soda; – 6-6,5 tbsp. flour; – 1 tbsp. vegetable oil; – 3-4 tbsp. sugar; – a pinch of salt.
Sift the flour through a sieve several times, then the donuts will be more fluffy and tender.
Pour kefir into a deep bowl, add sugar, salt, egg and vegetable oil. Mix everything well, add baking soda and, finally, flour. Knead a soft, smooth dough and let it sit under a dry towel for 15 minutes. Pinch off small pieces from it with your fingers, give them a spherical shape and immediately immerse in boiling oil.
