Viburnum clusters are a real storehouse of vitamins and healing substances. Bright red berries are harvested in late autumn and consumed fresh and dried.
Tips before starting
In winemaking, fresh fruits are used, harvested before the first frost. Drinks from them are fragrant, with a slight bitterness. The berries are put in jars and left to ripen in a lighted place.
It is not necessary to wash the viburnum – it is better to preserve the natural yeast, but you need to sort it out by removing the stalks, crumpled and spoiled fruits.
If you wait for natural aging, the frozen berry will acquire a strong bitterness: not everyone will like such wines.
Finely chopped lemon zest and spices can be added to the liqueur to enhance the aroma, and sugar can be replaced with honey to soften the taste.

The recipe shows the proportions for the preparation of a table drink. To get a dessert product, you need half a liter of water and 350 g of sugar, for a simple liqueur without vodka – 1 glass of water and 2 glasses of sugar. To enhance fermentation, you can add 1-2 handfuls of raisins.
Ingredients
Viburnum – 1 kg
Water – 1,7 L
Sugars – 300 g
Method of preparation
Grind the berries, add ¼ of the sugar, pour in 1 glass of water, let it ferment for 4 days.
Drain the juice, add the rest of the water to it, another quarter of sugar, put it for fermentation.
On the 7th and 10th day, add the remaining sugar, dividing it into two parts.
Wait for the end of fermentation, pour the wine into small containers, transfer to infusion in the cold.
Kalinovka liqueur recipe
Raspberry infusion is made in advance, in the season of its collection. To do this, berries slightly dried in the sun are poured with vodka in a ratio of 1: 1 and insisted in heat for 1-2 weeks, shaking occasionally, after which the liquid is drained and used for alcoholization and flavoring of slightly colored drinks.
Ingredients
Viburnum – 1 kg
Vodka – 0,5 l
Sugars – 150 g
Raspberry infusion – for coloring
Method of preparation
Wash and dry viburnum berries, pour into a 3-liter container, pour vodka.
Put sugar, add a little raspberry infusion.
Let it brew for 1,5 months, periodically filtering the liqueur.
Pour the finished drink into small vessels.
Pouring viburnum “Fast”
Ingredients
Vodka – 1 l
Water – ¼ l
Fresh viburnum juice – 1 cup
Sugars – 150 g
Method of preparation
Bring water to a boil, add sugar to it and stir until completely dissolved.
Pour the cooled syrup into a bottle, add viburnum juice and vodka, leave at room temperature for 2 days.
Seal the vessel and transfer to a dark, cool nook. The filling is ready in 2 weeks.
viburnum liqueur recipe
Wash the berries beforehand, pour over with boiling water, let the water drain.
Ingredients
Vodka – 1 l
Water – 400 ml
Viburnum – 1,5 kg
Sugar – 1,2 kg
Method of preparation
Pour viburnum into a large glass container, add a third of sugar.
Close the vessel, put in a warm, well-lit place for 2 days.
Pour vodka into the mass, let stand for 1-1,5 weeks.
Make syrup from water and sugar residues, cool, add to the infusion.
Shake the mixture, close the container, place in heat for 1 month.
Strain the liquor, pour into small vessels and store sealed in a cool environment.
