Natural ingredients, the energy of the love of the hostess and the sun will do their job. Homemade wine just can’t do any harm. Such an alcoholic drink will appeal to both guests and family. There are many varieties of grapes, but the drink from the dessert sultan is preferred by all masters of winemaking. This is a well-known sultana, with very small, almost imperceptible seeds. Amazing wines are made from it:

  • table dry;
  • delicious dessert;
  • sweet fortified.

In season, wine is made from grapes, and when there are no fresh berries, they are replaced with raisins, which are easy to purchase at the grocery chain.

Getting started with home winemaking

Those who have already made wine from raisins at home try to make sourdough on their own. Purchased yeast can fail. If they are “weak”, then fermentation slows down and oxidizes. Instead of a good starter, you get vinegar. Therefore, we will make a high-quality analogue of yeast from raisin berries:

  1. Pour raisin berries (200 g) into a bottle with a large neck, sprinkle with sugar on top. One teaspoon is enough.
  2. Pour the mixture with water (400 ml) and cork the bottle with a cotton plug.
  3. Let’s put the dishes with sourdough in a warm place for 3 days.

Do not forget that you need to store your own sourdough starter in the refrigerator for no more than 10 days. Many home winemakers use raisins for sourdough. It is taken in the same amount as fresh berries – 200 grams.

Important! Don’t buy packaged sourdough raisins. Its treated surface does not allow yeast bacteria to remain viable.

The starter is ready. After 3-4 days, you can start making wine from sultana grapes. Each type has its own nuances of preparation. But for any process, you will need the following ingredients for 10 kg of grapes:

  • regular sugar – 3 kg;
  • boiled water – 10 liters.

Additionally, prepare a sterile glove and container:

  • glass bottle with a volume of 20 liters;
  • 15 liter enamel pot

Do-it-yourself dry wine from Sultanin

This wine is made from kishmish without the addition of granulated sugar. The manufacturing technology is quite simple:

  1. Grind the sultana berries with a meat grinder or food processor to the state of gruel.
  2. We place in a pot or bottle for fermentation. We fill its volume by ¾, no more.
  3. We do not install a water seal due to the highly active fermentation process.
  4. We mix the mass daily. At the same time, we try to crush the cap of raisin berries, which forms on the surface of the drink.
  5. After 14 days, we squeeze out the mass, and return the squeezed juice back to the fermentation tank.
  6. We leave for further fermentation for another 14 days in a warm place.
  7. When the time has passed, drain the wort from the sediment. You can pass it through a siphon.
  8. Pour it into a container for fermentation and now install a water seal on the neck of the bottle.
  9. Now we leave the wine in a warm room for a period of 2 weeks to a month.
  10. At the end of the fermentation process, the sultana wine is decanted. In another way – poured, aerated, allowed to “breathe”.
  11. A couple of weeks clarified with egg white and filtered.

Now you can pour the sultana drink into bottles and immediately taste it. Dry wine does not require further aging.

Important! If the taste seems too sour, don’t add sugar! The only ingredient that can soften the taste is fructose.

Recipe for semi-sweet white sultan wine

A popular drink due to its amazing taste and aroma. To get a semi-sweet wine from sultanas, you need:

  1. Rinse thoroughly and chop the berries.
  2. Mix the resulting juice with the sourdough, which should be prepared in advance.
  3. Leave to ferment for 3-4 days.
  4. Stir the contents regularly twice a day.
  5. After 4 days, strain the liquid through cheesecloth and squeeze.
  6. Pour into a clean container, add 10 liters of slightly sweetened water at room temperature.
  7. Put a sterile glove on the neck of the bottle, not forgetting to make one puncture in it.

  8. Tie the glove tightly to the neck.
  9. Place the container in a room where the air temperature should not exceed 20°C.
  10. After four days, the fermentation process weakens and sweetened water must be added to the liquid. Proportions – for 2 liters of water, take 2 kg of granulated sugar.
  11. Transfer the future wine from raisins to a place with an air temperature of + 25 ° С.
  12. By observing the release of bubbles, the process of sugar fermentation is controlled. This takes 2-3 weeks. As soon as the top layer of homemade wine brightens and bubbles stop, the process is complete.
  13. The wine is decanted and aged for a month in a cool place.
  14. During this time, the drink is cleaned of sediment 3 times.

2 months after the start of preparation, the sultana wine is ready for tasting. The output from the specified proportion is 15 liters.

Before serving, be sure to steam the carafe, pour the wine and offer to guests.

A container with ready-made sultana wine is stored in an upright position, filled to the top. There should be at least 3 cm before the cork to prevent its contact with the drink.
