Some wineries become famous thanks to a single drink, although their assortment includes several dozen or even hundreds of items.

So it happened with the Crimean enterprise OJSC Solnechnaya Dolina, located in the vicinity of Sudak.

The company with a hundred-year history has become famous not for expensive elite drinks, but for the Black Doctor dessert wine.

The history of the creation of the drink and the origin of the name

The legendary wine was first released in the distant 30s of the last century.

Initially, the wine had a different name – “Ruby Crimean”, however, and the manufacturer, then it was also called differently – “Arkhaderesse”.

The author of the recipe was an associate of the famous winemaker Golitsyn and part-time his student named Ivanov.

The original ruby ​​drink was not particularly popular at that time, although it was highly appreciated at the all-Union tasting, held in Moscow in 1940.

The wine gained fame and rebirth in the 60s with a light suggestion from the Minister of the Food Industry, who liked the drink.

The products were renamed “Black Doctor”, in addition to the new name, they received an unusual legend of his origin.

They say that the vine bearing the same name was bred by a local Crimean doctor for health purposes.

The fruits that were collected on the plantations of the doctor, as well as the wine obtained from them, had healing properties and helped the owner quickly put even the most hopeless patients on their feet.

Whether there is some truth in the legend or not, the Black Doctor is really known for its healing qualities and is recommended in limited doses to compensate for the lack of certain trace elements and improve blood formation.

Characteristics of the drink and manufacturing features

They make the famous liqueur wine from the unique fruits of the Crimean varieties: Ekim Kara, Jevat Kara and Kefesia.

The age of the current vines owned by Solnechnaya Dolina is over 35 years old.

The first of these varieties (Ekim Kara) prevails in the composition of the drink: it is at least 70% in the product.

“Black Doctor” refers to vintage wines with a protected geographical indication (“CRIM”) and is not produced in any other regions.

A similar drink, in addition to the assortment of Solnechnaya Dolina, can only be found among the products of the Massandra winery, which makes it using a similar technology, but with some innovations.

Consumers note that the wines of different producers differ significantly from each other.

The original “Black Doctor” is characterized by a rich garnet color with light ruby ​​highlights.

The taste is dominated by notes of prunes, which are set off by confectionery aromas of vanilla and chocolate, southern berries and a soft pear-creamy plume.

Connoisseurs find mulberry tones in the drink, as well as delicate notes of cocoa and dried fruits.

The wine is characterized by moderate astringency combined with exquisite softness and velvety.

Fortress and sugar content is 16%.

Unique properties of wine

Due to the special manufacturing technology and the specifics of the area:

  1. Growing vines in a microzone with optimal soil and climate characteristics allows you to create high quality raw materials.

  2. For the manufacture of “Black Doctor” only grapes of strictly defined varieties are used. The number of suitable fruits is limited.

  3. Berries are harvested after reaching a predetermined level of sugar content (not less than 22%).

  4. Finished products undergo a mandatory two-year aging in special oak barrels in the old “Golitsyn” cellars, where a constant temperature is maintained at any time of the year.

  5. The use of proprietary production technology allows you to save the maximum amount of flavoring compounds and polyphenols in the final product.

Useful Properties

“Black Doctor” is one of those rare grape drinks that have healing properties and are recommended in small portions for hypertensive patients, as well as people suffering from anemia, malnutrition and high cholesterol.

Compared to other dessert wines, this product contains more useful components: tannins, phenols, flavonoids, vitamins and microelements.

The drink helps with chronic fatigue and blood loss, removes toxins and radioactive substances, normalizes the work of the heart, prevents the development of atherosclerosis and cancer.

How to drink “Black Doctor”

Drink wine should be at a temperature of 16-18 ° C.

The manufacturer advises to combine it with dark chocolate, fruits, ice cream and pistachios.

The drink is good as an addition to expensive cigars and elite cheeses.
