Ingredients for 8 people
– 1 kg of flour
– 6 eggs + 1 yolk
– 300 g of caster sugar
– 200 g of butter
– 200 g of chopped candied fruit
– 1 grated orange zest
– 40 g of baker’s yeast
– 30 g of granulated sugar
– 1 bean
– for the decoration: pieces of angelica, candied fruits
Prepare a sourdough
In a large bowl, dissolve the yeast in 1/4 glass of lukewarm water, then mix it with 125 g of flour, kneading slowly. Cover the sourdough and let it sit until it has doubled in size.
Prepare the dough
In another bowl, mix the 6 eggs with the caster sugar, the orange zest, then the softened butter and cut into small cubes. Pour in the rest of the flour while stirring. Then add the sourdough, the chopped candied fruit and knead the mixture for 10 minutes. Place the dough in a floured terrine covered with a tea towel. Leave to rest for 3 hours in a warm place.
Cooking and finishing
With the dough, make a roll 8 to 10 cm in diameter then bring the two ends together to obtain a crown. Insert the crown into the dough from below. Place the crown on a floured work surface and let it swell for about 1 hour in a warm place. Preheat the oven to 180 ° C (Th.6). With a brush, spread the egg yolk dissolved in a little water on top of the brioche, then sprinkle with granulated sugar. Put in the oven for 40 minutes. Check the cooking by sticking a needle in the center of the brioche: it should come out dry. When the brioche is cooked, decorate it with pieces of candied fruit.
