Festive salad – Olivier – is prepared not only for the New Year, but also for any holiday. By 2019, the salad was gaining as much popularity as the difference in the approach to ingredients. If initially crayfish necks were put into the salad, now boiled sausage and cucumbers are added to the classic Olivier. But what happens if you put a fresh cucumber in a salad and immediately mix it with the rest of the food and mayonnaise? – Of course, it will slightly acidify after a couple of hours at room temperature or the next day in the refrigerator. Especially if it’s a juicy cucumber. Or just stale.

It can also give acid to give onions. Or poor quality mayonnaise.
