Why is beef tongue cooked whole?
Reading time – 2 minutes.
Even if the tongue is very large, they try to find a saucepan that is large enough to fit in it entirely. Why? The skin of the tongue holds back juices, and after boiling the tongue remains very soft and juicy. But if you cut the tongue into parts, then the structure will be broken and the tongue after cooking may be dry.
Boil the beef tongue whole or cut into pieces – the choice is made based on the recipe. For appetizers and for baking, it is imperative that the tongue is intact, as the recipe includes serving a beautifully chopped tongue. But if the tongue is put in a salad, then you can cut the pieces into pieces.
