Among all varieties of edible mushrooms, butter mushrooms are considered one of the best in terms of taste. They are used in all technological processes: freezing, drying, salting, pickling and frying. The excellent digestibility of oil allows them to be used in any dishes. After thorough cleaning of sand, grass and leaves, you can proceed to the heat treatment of mushrooms. However, it may turn out that the boletus turned purple after cooking – why does this happen, and what can be done in such cases?
Why did butterflies turn blue after cooking and should I be worried?

First of all, you need to know that purple, lilac or blue color after heat treatment is not typical for oil. This means that, along with the butterflies, there were other mushrooms in the pan – goats (goats). But in this case, you should not be afraid. This is an absolutely edible type of mushroom, which practically does not differ in taste and appearance from butter. A kid is called a tubular fungus, which is part of the genus Oiler. They are prepared according to the same technology with their “relatives”, however, when cooked, they turn purple. But the mushroom does not get worse from the acquired color. Many housewives decorate boring monochromatic marinades with these purple “oils” after cooking. This aesthetically ugly mushroom can be boiled, stewed, fried, and also dried. And so that it does not darken much and retains its original pink color, you need to add a little table vinegar before cooking.
Another reason why butternuts turned blue after cooking is too long a heat treatment. With prolonged cooking, the vegetable protein is destroyed, and the mushroom acquires a bluish tint, but it is barely noticeable. As already mentioned, butterfish cannot turn blue or turn purple when cooked. For them, in such a situation, it is common to change their color to beige or light brown. It all depends on its original appearance, which is influenced by the terrain, soil composition and illumination.
Therefore, if the butternuts turn purple after cooking, do not worry. Apparently, while picking mushrooms, other representatives of this family got into the basket. But butterflies, as you know, do not have false (poisonous) twins.
