Why are boletuses bitter?
The bitter taste of mushrooms can be caused by a pepper mushroom, which is often confused with boletus due to their external similarity. Pepper mushroom is edible and after cooking it tastes good, but some bitterness may remain.
Mushroom lovers sometimes note that boletus tastes bitter after cooking. Many believe that the reason for this is the slimy film on the mushrooms, which they try to thoroughly clean before cooking. Because of this laborious process, some mushroom pickers do not like to collect boletus. But the mucus remaining on them during the cooking process does not at all affect the bitterness, and only makes the marinade viscous.
You can get rid of the bitterness without removing the film with a knife, but rinsing the already cooked mushrooms under a good pressure of water.
