Whether to drain water from potatoes
The rules for cooking potatoes are unambiguous – after boiling potatoes, still hot water must be drained… Leaving potatoes in water can cause the potatoes to fall apart into unsightly pieces in just a few hours. Another 1 minus, if you do not drain the water from the potatoes, the potatoes deteriorate faster in the water. So it is always better to wait until the potatoes are cooked and drain the water. If you are preparing ordinary boiled potatoes, peeled from the skin, then a piece of butter and herbs, and other seasonings are added to it. If potatoes are cooked in their uniforms, then it is all the more important to immediately drain the water, otherwise the tubers will become limp, get an unsightly appearance and even smell, and the peel will not peel off appetizingly in places.
Even if you plan to make mashed potatoes, then the water must be drained, but not to the last drop. It is recommended to leave a couple of tablespoons of liquid and crush the puree along with it, gradually adding milk. It’s another matter if you prepare potato sauce from potatoes in cubes – in this case, much less water is poured, and after cooking the potatoes are ground directly in the potato broth. The second exception to the general rule is potato soup, which also boils potatoes in cubes and is quite satisfying on its own.
