Where to eat the best croissant in Spain?
The Gremio de Barcelona Pastry School has brought together the 60 best pastry chefs in the nation on the occasion of the XI Contest Best Artisan Butter Croissant in Spain 2018. The participants were competing for a cash prize of 1.000 euros, but really the ambition of all of them was the recognition of a job well done.
The award fell on the stoves of Albert Roca, a prestigious Catalan pastry chef who has nothing to do with the well-known Roca brothers. He runs the Sant Croi pastry shop, an unavoidable gastronomic reference.
The merits with which the sweet winner came to the summit of the confectionery nationwide were, on the one hand, his flavor (which scored 40 out of 100); on the other, his puff pastry, its alveolate (the holes inside the dough), its color, its format and finish of the product.
What is the best croissant in Spain like?
The contest guidelines strictly prohibited fillings, ornament and any type of customization. They should be presented in their purest essence, without artifacts.
Participants had to deliver a dozen butter croissants, straight horn or half moon, with a minimum of three turns, cooked, and a weight had to range between 45 and 65 grams per piece.
Albert Roca presented a perfect set of 12 croissants interpreted to parisian style: totally straight. The legend of the croissant differs diametrically from the style presented by the Catalan.
The croissant was born in Vienna in the XNUMXth century, was the symbol of the national victory before the Turks: the Ottoman army invaded the city at dawn through tunnels that they had previously dug. The whole city was asleep, except the bakers, who gave the alarm signal. Once the enemy was defeated, the guild created this dessert crescent shaped, the emblem of the Turkish flag.
