When to salt barley when cooking?

When cooking, barley is best salted in 2 stages: add a little salt at the soaking stage, and add salt to the boiled cereal. The only exception is pickle – pickled cucumbers are used in this soup, the broth is also salted during cooking, and if you add salted pearl barley, over-salting can happen.
If there is no time for soaking, or you are using express barley from bags, salt at the end, as salt “tan” the cereals.
In general, barley perfectly absorbs salt even when cooked. Usually, after cooking, the pearl barley garnish is caulked with butter – at this stage you can add salt and be sure that after stirring and infusing, the dish will be evenly salty.
