When should the pasta be washed with water
 

It would seem that with the end of Soviet life, we all suddenly discovered the knowledge that, it turns out, after cooking, pasta does not need to be rinsed with water at all. And you should not quickly get rid of the water in which the pasta was cooked, it will still come in handy – why, we will tell you a little later. 

First, let’s give the pasta rinsing credit. There is a case when they need to be placed under running water. 

It is possible and even necessary to rinse pasta in one case: when you do not plan to immediately serve it on the table. Shifting still hot spaghetti or cones immediately after cooking into a container for storage, you run the risk of getting overcooked food, as it will be “cooked up” under the influence of its own temperature. Of course, you shouldn’t leave the paste under running water for a long time – just cool it down.

Do not empty pasta water

During the boiling process, starch is released from the flour into the water. And it is this cloudy liquid that will help make the pasta sauce thick and smooth. The starch contained in the flour acts as an emulsifier and thickener. Just add a couple of tablespoons of pasta water to your sauce and stir slowly. The result is a thick, creamy consistency.
