How to replace yeast?
Baking powder or baking soda works great here. Soda requires an acidic environment in order to function. Hence, if you use baking soda alone, the recipe should include fermented milk drinks or lemon juice or a little apple cider vinegar. It may also be the presence of honey, brown sugar, cocoa, apples or molasses. Soda begins to work as soon as it comes into contact with the ‘acidic’ product, so the product should be immediately put into the oven. Carbon dioxide release does not last long, which is why it is a quick recipe conditioner. Remember that for the raising agents to work, the dough must not be too thick or clumpy, as then it may fail. The consistency must be relatively loose.

Wheat or spelled flour works best, but buckwheat is also a good choice if you are also gluten intolerant. You can put any add-ons. These can be flakes, bran or seeds, e.g. flaxseed or chia. Remember, however, that seeds and nuts are rich in fat, and thus in calories. If you are following a low-calorie diet, choose foods without these types of supplements.
