In the case of flour, the substitution is relatively simple, as we wrote about in ‘Gluten-Free Cakes’, but in the case of eggs, it seems to be a bit more complicated. Their binding properties (e.g. cookies, cutlets), lending body (e.g. biscuits) or moisture are widely used in most traditional recipes. However, if you are unable to eat them or are reluctant to eat them, you have several options. However, it should be considered for what purpose the eggs are used in a given recipe in order to choose an appropriate substitute. Also remember about the end result and the desired taste. A banana or an apple can replace an egg in desserts, but it is not necessarily suitable for dry dishes.
You can replace 1 egg with:
- 1 tablespoon of ground linseed mixed with 3 tablespoons of hot water – adds viscosity, moisture, binds the ingredients,
- 1 tablespoon of chia seeds poured over 1/3 cup of water – works similar to flaxseed,
- ½ crushed banana – gives the baking moisture,
- ¼ cup of apple mousse or pumpkin, potato or sweet potato puree – the baking will be moist thanks to it, it will also help to bind dry ingredients,
- 1 teaspoon of baking soda and 1 tablespoon of vinegar – they will make it fluffy,
- XNUMX/XNUMX cup ground tofu – texture resembles a hard-boiled egg, a good substitute for dry dishes,
- 2 tablespoons of potato flour or chickpeas, soybeans, oats plus 3 tablespoons of water – binding and loosening properties,
- XNUMX/XNUMX cup plain or vegetable yogurt – adds moisture and binds the ingredients,
- 2 teaspoons of baking powder, 1 tablespoon of oil and 2 tablespoons of water – binds, gives fluffiness, moisture,
- 1 tablespoon of gelatin or agar agar dissolved in 3 tablespoons of hot water – binds the ingredients, adds moisture,
- 1 ripe avocado – adds moisture and binds the ingredients.
What to give instead of eggs?
It is worth reviewing your existing recipes and trying the above substitutes. The fewer eggs in the original recipe, the easier it is to replace them, and sometimes they can be omitted, e.g. in the case of meatballs, just add grated vegetables such as carrots or zucchini, and in the pancakes, take a little more milk or water instead of the egg.
What to replace milk in dough?
It is mainly used to add moisture and texture to baking. Often it is enough to replace them with water, such as in pancakes. Then, however, a bit of the sweet, specific taste that milk gives. If you only have to exclude cow’s milk, you have a whole range of milk from other animals, such as sheep or goat, to choose from. In the case of vegans, plant milks such as soy, rice, almond, oat and coconut are perfect. You can also replace a glass of milk with ¾ cup water and ¼ cup oil or melted butter. Then it will additionally improve the taste of the dish, as it is the fat that carries it. It is present in milk, but not in water. You can also use the same amount of yoghurt in place of milk, be it vegetable or plain yoghurt. In the same way, you can replace sour cream.
Can I add water instead of milk?
You can replace 1 cup of cow’s milk with:
- 1 glass of other animals’ milk – you can use it in any type of dish,
- 1 glass of rice, soy and almond milk – it works best in desserts due to its specific taste,
- 1 cup of oat milk – perfect for both sweet and dry dishes,
- ¾ cup of water and ¼ cup of oil or melted butter – will work well in all types of recipes.
What to replace milk in a recipe?
What to do when you need to replace condensed milk? You can replace it with coconut milk in a 1: 1 ratio, or you can evaporate some of the water from other plant-based milks in a saucepan. However, be careful not to burn them. But how do you replace whipped cream? Here, on the other hand, coconut cream will be perfect. You can take it off the top of the coconut milk can.
