What to put on the holiday table in the year of the pig

Of course, it’s better to write a holiday menu and a list of all the necessary products in advance. This will help you not to forget about something important and gradually fill the refrigerator so as not to get into the New Year’s bustle of stores.

What to keep in mind when designing a menu for 2019? This is the year of the pig, so it is better that pork dishes are not on the table.

 

Salads

European versions of salads and Russians are very different. First of all, the calorie content. Therefore, it is better to find a place for vegetable or Greek salad on any table.

Salad “A la Rus”

In Spain there is a salad “A la Rus”. This is a Russian Olivier, remade in the Mediterranean way, which is very popular among foreigners.

Ingredients:

  • Boiled beef – 300 gr.
  • Boiled carrots – 2 medium pieces

The recipe is very simple. Boil the beef, potatoes and carrots, let cool and cut into cubes the same size as the peas. Defrost peas and pour over boiling water, you do not need to cook it. Cut the cucumbers as well. Stir all ingredients and season with yogurt. Garlic and lemon will add spice and slightly sourness to the sauce. You can replace the sauce with light mayonnaise.

Korean carrot salad

A salad with a minimum of ingredients, but very tasty, bright and quick to prepare, which is extremely important in the New Year’s bustle.

Ingredients:

 
  • Korean carrots – 250 gr.
  • Boiled chicken breast – 300 gr.
  • Bulgarian pepper (it is better to take red) – 1 pc.
  • Mayonnaise – 100 gr.

Cut the finished carrots into cubes 3 cm long. Boil the breast (you can do this in advance so that it is infused), disassemble into small pieces. Cut the Bulgarian pepper into small cubes. Mix everything and season with mayonnaise.

Hot meat dishes

As a rule, rarely does anyone come to hot dishes on the holiday itself, and they remain to delight us with their presence in the refrigerator. Therefore, it is easier to think in advance what will remain delicious the next day. For these purposes, chicken is best suited.

 

Baked chicken

Baked chicken is the queen of any festive table.

Ingredients:

  • Chicken carcass – 1 pc.
  • A mixture of Provencal herbs to taste
  • Garlic (head) – 3 pcs.
  • Olive oil – 2 Art. l
 

Rinse the chicken carcass well, squeeze a few cloves of garlic into the mixture of Provencal herbs and add 2 tablespoons of olive oil. Grate the chicken well with the mixture, wrap in foil and leave to marinate for 8 hours. Preheat the oven to 180 degrees and bake the chicken for 1,5 hours, constantly pouring over it with the released fat.

It is not necessary to weight hot dishes with a side dish of potatoes or pasta on New Year’s holidays. It would be much better to serve vegetable ratatouille, which will also be served as a separate dish, especially if there are vegetarians among the guests.

Vegetables a la ratatouille

For this dish, any vegetables that are available in the refrigerator are suitable.

 

Ingredients:

  • Eggplant – 1 pcs.
  • Courgettes – 1 pieces.
  • Bulgarian pepper – 1 pc.
  • Tomatoes (large) – 2 pcs.
  • Onions – 1 pc.
  • Olive oil to taste

Cut all vegetables into large pieces, fry in a large frying pan for 5 minutes until the juice is released, then simmer over low heat for 40 minutes.

  • Garlic – 2 teeth
  • Mayonnaise – to taste

A well-known and popular snack. Grate cheese on a fine grater, squeeze out the garlic. Season with mayonnaise. Cod liver on a cracker

Ingredients:

  • Crackers – 1 pack.
  • Cod liver – 1 can
  • Boiled eggs – 4 pcs.
  • Shallots – 30 gr.

Ingredients:

  • Oranges – 6 pieces
  • Sugar – 800 gr.
  • Bitter chocolate – 200 gr.

The oranges need to be peeled, but try not to damage the skin too much. Cut the peel into strips of 8 mm. width. To remove the bitterness, it is necessary to boil water several times and boil the crusts for 15 minutes. Repeat 3 times. Then put to boil 0,5 liters of water, add 200 gr. sugar and crust. Cook for 15 minutes, then add another 200 gr. After 15 minutes, another 200 g, and after 15 the last 200 g. Sahara. Monitor the amount of syrup carefully. If necessary, add water a little at a time. Remove the crusts from the syrup and let them dry thoroughly. This is best done on a silicone mat to prevent the crusts from sticking. Melt the chocolate in a water bath. Dip the crusts in chocolate and put back on the silicone mat until the chocolate is completely solidified.

New year cake

No holiday is complete without a large cake. We suggest making a cheesecake that will appeal to both adults and children.

Ingredients:

  • Butter – 100 gr.
  • Curd cheese – 300 gr.
  • Sugar – 1 glass
  • Eggs – 3 pieces
  • Cream 20% – 250 g.

Crumble the cookies and mix with softened butter. Close the bottom of the mold with removable edges. In a bowl, mix the cheese and sugar, add the eggs and then the sour cream. Pour the resulting mixture over the cookies and put in an oven preheated to 180 degrees for 40 minutes. After cooking, do not remove the cheesecake from the oven, let it cool right there. Refrigerate cheesecake for at least 8 hours. Therefore, this dessert is best prepared in advance.

New Year drinks

In addition to champagne and other alcoholic beverages, guests at the festive table can be surprised with hot alcoholic cocktails and mulled wine.

Mulled wine

The most winter drink can still be made for New Year’s if citrus fruits are added to the wine instead of other fruits.

Ingredients:

  • Dry red wine – 1,5 l.
  • Mandarins – 5 pcs.
  • Zest of one lemon – 1 pc.
  • Carnation – 10 pcs.
  • Cover – 3 g.

Sugar to taste (do not add a lot at once, tangerines will add sweetness to the drink, then you can add further to taste).

Wash the tangerines and lemon well, cut the tangerines in the peel and crush them in your hands over a saucepan. Remove the zest from the lemon. Pour in wine and bring to a boil. Turn off and add spices with sugar. Then you need to let the mulled wine stand for 10 minutes, during which time the spices will have time to open, and the drink itself will cool down a little. Can now be poured into tall glasses. The main thing is to have time to drink warm mulled wine.

You can also make cherry mulled wine using the same recipe. One has only to replace tangerines with frozen cherries. Leave the lemon zest to add bitterness and light citrus flavor.

Eggnog – Christmas drink

This drink is popular in the USA, Canada and Europe. You can surprise your guests and cook it. The only thing to consider right away is that it is prepared on the basis of raw eggs, but they are heat treated.

Ingredients:

  • Chicken Eggs – 3 pieces.
  • Milk – 200 ml.
  • Cream 20% – 200 ml.
  • Whiskey – 100 ml
  • Sugar – 70 gr.
  • Cinnamon, nutmeg, vanilla – to taste

No proteins are used in the preparation of eggnog. At the first stage, you need to separate the yolks from the proteins, add sugar to the yolks and grind until it is completely dissolved. In a separate saucepan, combine milk and spices and bring to a boil. Add the sugar and yolks in a thin stream and simmer until the eggnog is thick. Add cream, boil a little and pour in whiskey. Of course, you can make a non-alcoholic eggnog, in which case the cocktail can be given to children. Pour eggnog into glass goblets, garnish with a cap of whipped cream, ground cinnamon, grated chocolate, or even ultrafine coffee.

Holidays and guests are very good. But often housewives prepare complex and heavy meals. So our advice is to choose easy-to-prepare meals with known and healthy ingredients.
