- 2,5 kg of waves (soaked and boiled);
- 3 large carrots and onions;
- 15 peas of black pepper;
- 2 tbsp. vegetable oil;
- 1-2 art. l. 9% vinegar;
- 3 bay leaves;
- Salt – to taste.
So, what do they do with volushki mushrooms during the preparation of caviar?
- Pass the main product through a meat grinder and put in a saucepan with a thick bottom.
- Grind carrots with onions (chopping method optional), fry until tender for 1 tbsp. vegetable oil.
- Pass the vegetables through a meat grinder and add to the mushrooms.
- Salt, put bay leaf and pepper into the mass, mix, simmer for at least 1 hour, stirring constantly with a wooden spatula.
- 10 minutes before the end of the process, pour in the vinegar and mix.
- Pour the mass into sterilized jars and roll up the lids.
Store in the basement or cellar after complete cooling.
Fried waves for the winter
An equally interesting recipe showing what can be done with waves is described below. It is very simple, since you need to use only 2 ingredients – fruiting bodies and vegetable oil, which can also be replaced with lard.
- Volnushki (soak and boil) – 1,5 kg;
- Vegetable oil or lard;
- Salt (optional).
- Put the boiled volnushki in a pan and fry until the moisture evaporates.
- Pour in enough vegetable oil so that it completely covers the mushrooms, about 1 cm.
- Simmer for 20 minutes, salt, and then transfer the mushrooms to sterilized jars. The level of mushrooms should be 2-3 fingers below the neck of the jar.
- Pour the remaining oil into jars, and if it is missing somewhere, then you need to heat a new portion in the pan, and only then add it.
- Roll up or close with tight nylon lids, let cool and take out to the basement.
In winter, you will get an almost ready-made snack that you just need to put out of the jar and add to the dish.
