The end of the summer season, many of us are faced with the question “What to do with the mountains of attacking apples?”. Charlotte and apple juice delight your dinner table almost every day, and the number of apples, meanwhile, does not want to decrease. Let’s look at a few alternative recipes featuring a favorite Russian fruit.
8 servings Ingredients: 6 potatoes 1 sweet onion 1/2 cup grape or olive oil 2 tbsp. apple cider vinegar 2 garlic cloves, crushed 2 apples (peeled, seeded, diced) 1/2 cup sour cream 1 tbsp. Dijon mustard sea salt and freshly ground black pepper Bring potatoes to a boil in a medium saucepan, cover, simmer gently for 20 minutes (until potatoes are soft). Let cool. Cut into rings. Grate the onion into a large bowl. Mix together the oil, apple cider vinegar and garlic in a small bowl. Add chopped potatoes to the grated onion, mix with the ingredients in a small bowl. Add apples. Add sour cream, mustard, salt and pepper to the salad to taste.
12 servings Ingredients: 1,5 cups plain flour 1,5 cups whole wheat flour 2 tsp. baking powder 1,5 tsp ground cinnamon 1,5 tsp ground ginger 1 cup honey 3/4 cup coconut milk Egg substitute equivalent to 2 eggs 1 apple, peeled, pitted, grated (should make 1/2-3/4 cup) 1 carrot, peeled and grated (1/2-3/ 4 cups) 1/2 cup coconut flakes Preheat oven to 200C. Butter 12 muffin tins. Mix the flour, whole wheat flour, baking powder, cinnamon and ginger in a large bowl. Make a hole in the middle of the dough. In another bowl, mix honey, coconut milk, butter, and egg substitute. Add apple, carrot and coconut flakes. Pour the mixture into the cavity of the dough, mix well. Divide the resulting dough into 12 molds. They should be almost full. Bake over medium heat for 18-20 minutes. Let the muffins cool before serving. Instead of mango, you can use any other fruit you like, such as a banana. 5 servings Ingredients: 1 large sweet apple (peeled, pitted, diced) 1 ripe banana, sliced 1 peeled, diced mango 10 strawberries 1/4 cup honey 1/2 cup milk 1 cup vanilla yogurt 1 cup ice cubes Place all of the above ingredients in a blender, mix until smooth.
