What to do if pancakes stick to the pan and break

The saying is offensive, but true – often the first pancake really clings to the pan and refuses to turn over. As a result, it leaves it in the form of an absolutely unappetizing lump of raw dough. Then, oddly enough, things go better. We figure out why this happens and how to leave lumps in the culinary past. 

Reason 1. Frying pan

According to our editor of the “Home” column, there are no unsuitable pans for pancakes. “I fried on cast-iron and Soviet stainless steel, and on special pancakes, and on“ meat ”- with a checkered surface. Everything always worked out, ”she says. 

But the pan needs to be prepared for work. First, wash thoroughly, especially if it has been idle for several days, or even weeks. Then dry it no less thoroughly. And the final chord is to ignite it with coarse salt. After that, the surface must be wiped with a napkin so that the pancakes are not salted. 

Reason 2. Temperature

If you’re in a hurry and pour out the first pancake before the pan is properly warmed up, it will definitely stick. Therefore, the following are better: the pan has reached the desired temperature. 

Reason 3. Too thin dough

Reason 4. Dough without eggs

Eggs aren’t just for taste. Egg white is a kind of binder in the dough. Without eggs, the dough is too loose, and therefore breaks.
