Summer is a favorite time of the year for many because you can enjoy the seasonal berries. Cherries, raspberries and, of course, strawberries. All this is so delicious! And for many, summer is the time to prepare for the winter. There are a lot of strawberries every year, they are very useful and beautiful. In this article, we have prepared three of the most delicious and healthy summer strawberry recipes for you. All recipes are prepared without sugar and premium wheat flour. Feel free to include them in your menu, even if you are on a diet!
Recipe 1. Light strawberry PP cake
These small cakes are perfect for a festive table and as a dessert for tea drinking. They can be prepared as a cake, as a cake or as a roll – the choice is yours! They are prepared on the basis of a banana biscuit, which turns out to be incredibly tender and “wet”. It doesn’t even need to be impregnated with anything. It’s insanely delicious!
Ingredients:
- Banana – 1 pcs.
- Egg – 1 pcs.
- Yogurt – 150 gr.
- Cottage cheese 2% – 100 gr.
- Erythritol – 1 tbsp.
- Rice flour – 1 tablespoon
- Oatmeal flour – 1 tbsp.
- Corn flour – 1 tablespoon
- Strawberries – 100 gr.
How to make PP strawberry brownie:
The preparation of these cakes is divided into two stages: biscuit and cream. To make a biscuit: In a deep bowl of banana, add the egg and 100 ml. yogurt, purée with a blender until smooth, then add flour and half a tablespoon of erythritol and knead the dough. The sponge cake can be baked in one large layer or poured into muffin tins. Send the biscuit to the oven at 180 degrees for 15 minutes. While the biscuit is baking, prepare the cream.
For the cream, mix the curd with the yogurt and the remaining erythritol, and just rinse the strawberries and cut them into nice slices. After the biscuit has cooled, it needs to be cut.
It remains only to collect the cakes: grease the biscuit base with cream and lay out a layer of strawberries. Put a biscuit on top and grease with cream again and garnish with strawberries.
Life hack: if you are not ready to turn on the oven in the hot summer time, then this biscuit can be baked in the microwave or even replaced with round whole grain crisps.

Recipe 2. Curd snacks with strawberries
All children, and many adults, love curd snacks from the store. But have you seen their composition? Often, starch, thickeners, sugar, preservatives and other unhealthy substances are added to store-bought curds. We offer to prepare healthy cheese curds stuffed with strawberries. In the context, it looks especially appetizing (calorizer). Protein gives the cream a sweetness and creamier texture. If you don’t have protein, then you can simply exclude it from the recipe by adding a sugar substitute.
Ingredients:
- Cottage cheese 2% – 300 gr.
- Yogurt – 100 ml.
- Chocolate – 150 gr.
- Protein – 15 g.
- Strawberries – 70 gr.
How to make curd snacks with strawberries:
This dessert will take time to prepare, but it will be worth it! The first step is to melt the chocolate in a water bath. Stir well so that no lumps remain. Then the silicone muffin tins should be smeared with melted chocolate over the entire area and put into the freezer for 10 minutes. Do not spare the chocolate, let the layer be thicker than they will break.
For cream, mix curd with yogurt and protein. For a festive version of this dish, you can use cream cheese. Put the cream in the frozen molds to close the bottom. Then put strawberries in each mold and fill with cream to the top. Put in the freezer again for 10-15 minutes. When the curd mass grasps a little, you need to fill the top of the molds with the remaining chocolate, smearing the edges well. And again send to the freezer for 15 minutes.
After this time, you can get the curds from the molds. The silicone will easily come off the cooled chocolate. Or you can hold the curds in the freezer longer, and defrost and remove them from the molds just before serving. Serve chilled, of course.

Recipe 3. Strawberry non-alcoholic mojito
Strawberry Mojito is an incredibly delicious, refreshing and summertime drink. It will save you from thirst, quench your cravings for sweets, and besides, it turns out to be very beautiful. We advise you to immediately prepare a large jug for a friendly outdoor party.
Ingredients:
- Strawberries – 300 gr.
- Mint – 5 gr.
- Lemon juice – 3 tablespoons
- Ice crushed – 100 gr.
- Carbonated mineral water – 500 ml.
- Erythritol – 1 tbsp.
How to make Strawberry Alcohol Free Mojito:
The preparation of this drink takes exactly five minutes, the main thing is to freeze the ice in advance. Strawberries with the addition of erythritol must be chopped with a blender. Do not grind in mashed potatoes, let the pieces remain, it is tastier and more interesting. Then add lemon juice to the strawberries, tear with your hands and knead the mint a little. Mix everything and pour into a serving jug. Dilute with mineral water to taste. Add ice before serving.
Instead of mineral water, you can use Schweppes or 7-Up, it all depends on how you like it, bitter or sweet. If you don’t drink soda, add plain water.
