New Year is a magical time when you want to feel a real fairy tale. To implement it, you need to carefully prepare. However, such chores are only a joy! They create a festive yearning for New Year’s Eve.

The next year 2020 is especially remarkable for its round pairing date. In addition, according to the eastern calendar, this is the year of the White Metal Rat. In order for the symbol of the year to be merciful to us and help in everything, you need to know his preferences and properly appease.

In principle, the rat is omnivorous and likes to stock up. The mistress of the year will be delighted nuts, cereals, lean meats (veal, beef, chicken, turkey), different types of ham, stewed vegetables, fish, bread, any sweets and fruits.

It’s better to get by with drinks champagne, and complement the dessert green tea… It is important not to forget about apples, which the rat adores. The question arises: how cheese – the most favorite food of rodents? It certainly has a place to be. Just pay attention that not all of its species are to the liking of rats. For example, there are those whose smell scares away animals: brie, Roquefort, Camembert, etc. Choose a variety with a neutral flavor: feta, feta cheese, Adyghe, ricotta, etc.

Main course

Since the rat prefers simple food, it is not worth experimenting. After all, even from ordinary ingredients, you can make a real masterpiece. For example, pilaf is perfect. This dish has everything a rat likes: cereals, meat and vegetables.

Option 1. Pilaf with turkey

Ingredients: turkey fillet – 500 g, long-grain rice – 500 g, vegetable oil – 50 ml, 2 onions, 3 medium carrots, 4 garlic cloves, barberry, cumin, salt and pepper – to taste.

Cooking: cut the meat into pieces and fry over high heat in vegetable oil. Cut the onion into cubes, the carrot into small and thin strips. Cut the garlic in half. Add onions to the turkey, after 3-4 minutes – carrots. Rinse the rice thoroughly if not parboiled. The better the rice is rinsed, the more crumbly it will be. Ideally, you should soak it in the evening. Pour rice into a saucepan, add spices, salt and garlic. Fill everything with water 1,5-2 cm above the rice level.

Simmer over low heat for 45 minutes, until the rice is tender. You can cook pilaf in a frying pan until the water evaporates, and then put the cast iron with a dish in an oven preheated to 150 ° C. This will make the pilaf even tastier. Serve hot.

Option 2. Duck with apples

Option 3. Crispy trout

This dish from Yulia Vysotskaya is simple, healthy and tasty.

Ingredients: 2 trout fillets, 300 g mozzarella cheese, 1/2 lemon, 3 sprigs of parsley, basil and cilantro, 2 cloves of garlic, 2 tbsp. l. bread crumbs, black pepper, sea salt.

Cooking: preheat the oven to 190 ° C. Squeeze juice from half a lemon, garlic (peeled, of course) and coarsely chop the greens. Put the fish in a baking dish, skin side down, salt, pepper, sprinkle with lemon juice, sprinkle with chopped garlic and herbs (leave a little green for decoration). Cut the mozzarella into slices 4‒5 cm thick and spread over the fish. Sprinkle everything with breadcrumbs and bake in a preheated oven for 25-30 minutes. Serve garnished with the remaining herbs.

In the Year of the Rat, it is advisable to serve snacks on bread or bran loaves. Vegetables, seafood and light meats, as well as soft types of cheeses, are perfect as a filling.

Option 1. Crostini with ricotta

Ingredients: wholemeal bread, 3 tbsp. l. olive oil, 200 g ricotta, 4 tomatoes, 2 sprigs of basil.

Cooking: Dry the bread in the oven or in a frying pan, sprinkle with olive oil. Rub the ricotta through a sieve, peel and seed the tomatoes, finely chop. Mix cheese and tomatoes, add finely chopped basil, 2 tablespoons of olive oil, salt and pepper to taste. Spread the resulting pasta on bread.

Option 2. Fish tartlets

Ingredients: 200 g fillet of lightly salted red fish, 3 hard-boiled eggs, fresh cucumber, herbs, a little Greek yogurt.

Option 3. Cheese appetizer with squid

Ingredients: crackers for serving, 350 g squid, 3 eggs, 150 g cheddar cheese, 3-4 cloves of garlic, 50 g mayonnaise, a pinch of curry.

Cooking: boil the squids and pass through a blender – they should turn into soft crumbs. Grate cheese and hard-boiled eggs. Mix all ingredients, add curry, chopped garlic and season with mayonnaise. Serve with crackers.

Design of the table

It is also worth paying special attention to the table decor. Nothing should be superfluous. Serving can be done in neutral colors, such as a gray tablecloth, white napkins, and blue crockery. It is also necessary to ensure that guests have silverware and gilded glasses.
