In our time of round-the-clock trade and year-round availability of any products, young potatoes stand a little apart, because the most delicious is “our own”, grown in our strip in the middle of summer.
The simplest and fastest dish is boiled potatoes with fresh dill, aromatic, tender and impossibly tasty. The main treatment for young potatoes is thorough washing, preferably with a brush.
The thin peel is easily peeled off, but there are so many vitamins in it that it is much more useful to leave it, especially since it crunches so deliciously when bitten.
Any dish made from young potatoes will turn out to be excellent, because it is easy to prepare it, but it is delicious to eat.
Young potatoes with sesame seeds
Ingredients:
- Young potatoes – 1 kg.
- Sunflower oil – 3 tbsp. l.
- Sesame – 4-5 Art. l
- Potato seasoning – to taste
- Salt – to taste.
Fry sesame seeds in a dry frying pan for 3-4 minutes, set aside. Rinse the potatoes well, cut them in half lengthwise, and place them in a baking dish, cut upwards. Drizzle with sunflower oil, sprinkle generously with sesame seeds, seasoning and salt. Send to an oven preheated to 190 degrees for 30-35 minutes.
Fan of young potatoes
Ingredients:
- Young potatoes – 1 kg.
- Butter – 100 gr.
- Dried thyme – 1 tsp
- Parsley, cilantro – 1/2 bunch each
- Garlic to taste
- Salt – to taste.
Rinse the potatoes, dry with a paper towel and cut across into thin strips, without cutting through to the end. For the convenience of cutting, place the tubers on two skewers for barbecue (toothpicks or wooden sticks for sushi are suitable), placing them on the long side of the potato. The sticks will not allow the knife to cut the tubers, the fan will turn out to be neat. Place the potatoes on a greased small baking sheet, season with salt and sprinkle with thyme. Lightly melt the butter and pour over the tubers, sprinkle with finely chopped garlic. Bake in an oven preheated to 200 degrees for 35-40 minutes. Serve sprinkled with chopped herbs.
Young potatoes wrapped in bacon
Ingredients:
- Young potatoes – 1 kg.
- Raw smoked bacon – 250 gr.
- Sunflower oil – 1 tbsp. l.
- Potato seasoning – to taste
- Salt, ground black pepper – to taste.
Rinse the potatoes well, mix salt, pepper and seasoning, roll each tuber in this mixture and wrap in half a bacon on all sides, like a ball. Put on a greased baking sheet and cook in an oven preheated to 180 degrees for 30-35 minutes.
Young potatoes with spicy cheese
Ingredients:
- Young potatoes – 0,5 kg.
- Blue cheese (Roquefort) – 100 gr.
- Cream 15% – 50 gr.
- Garlic – 1 clove
- Fresh thyme – 2 sprigs
- Olive oil – 1 tbsp. l.
Wash the potatoes, dry them and place them in a greased baking dish. Cook in an oven preheated to 190 degrees for 30-35 minutes. Combine cheese and cream, finely chopped garlic and thyme leaves. Cut the finished potatoes crosswise, put the dressing on top and serve immediately.
Young potatoes in Spanish
Ingredients:
- Young potatoes – 1 kg.
- Garlic – 4 prongs
- Sweet bell pepper – 2 pcs.
- Chili pepper – 1 pcs.
- Olive oil – 2 tbsp. l.
- Balsamic vinegar – 1,5 tbsp. l.
- Zira, Imeretian saffron – to taste
- Dried paprika – to taste
- Salt, ground black pepper – to taste.
Rinse the potatoes and cook in salted water for 10 minutes. Chop chili and garlic, add cumin, mix thoroughly (ideally in a mortar), pour in vinegar and add paprika, mix. Drain the pan, put the potatoes in a skillet with heated oil, fry for 5 minutes. Cut the bell peppers into rings and put on the potatoes with hot pasta, stir and cook for 4-5 minutes. Before serving, sprinkle with coarse salt, garnish with herbs and tomatoes.
Rustic new potato salad
Ingredients:
- Young potatoes – 0,5 kg.
- Egg – 4 pcs.
- Beans – 200 gr.
- Garlic – 1 clove
- Sausage Krakowska – 1 pc. (ring)
- Balsamic vinegar – 1 tbsp. l.
- Parsley – 1/2 bunch
- Salt – to taste.
Rinse potatoes, cook in salted water for 15 minutes. Boil eggs in a “bag”, beans – for 2-3 minutes and immediately pour ice water. Peel the sausage and cut into circles, fry with chopped garlic until crisp. In a salad bowl, mix the halved potatoes, beans and sausage, add vinegar and chopped parsley. Top with quartered eggs and serve.
Young potatoes with tomatoes and chicken thighs
Ingredients:
- Young potatoes – 0,5 kg.
- Chicken thighs – 8 pcs.
- Bacon – 150 gr.
- Olive oil – 2 tbsp. l.
- Cherry tomatoes – 400 gr.
- Tomato paste – 2 Art. l
- Garlic – 3 prongs
- Fresh thyme – 4 sprigs
- Chili pepper – 1 pcs.
- Salt, ground black pepper – to taste.
Rinse the potatoes well and place on a greased baking sheet with thighs, pepper and salt. Free the chili pepper from the seeds, grind with a blender together with tomato paste, thyme leaves and olive oil. Grease chicken and potatoes with the resulting mixture, cook in an oven preheated to 180 degrees for 20 minutes. Sprinkle with chopped bacon and bake for 10 minutes. Place the cherry tomatoes and place in the oven for another 10-15 minutes. Serve with salad leaves and a glass of red wine.
