Choose the proven hits of any men’s party chicken wings, fried potatoes, homemade burgers, and for an appetizer surprise the male audience with crunchy spring rolls. All this is prepared quickly, you can eat with your hands, and it is delicious, like in a restaurant. After all, the recipes were shared with us by Oleg Petrichenko, the chef of the recently opened, but already incredibly popular metropolitan restaurant Cheapside Josper Bistro.

Чего хотят мужчиныCheapside is a new creation of the team of the Coffee company chain, known for its impeccable quality, the best coffee in the city and creative approach to the menu. The concept of the restaurant is built around a hosper-a closed grill oven.  Cooking in this oven is equivalent to grilling on an open fire. The meat, for example, is accompanied by an excellent aroma of smoke.

In addition to dishes from the oven, there are many items on the menu that you will return here more than once. For example, an incredibly delicious and original salad “Bruce-salad”. It is an amazing combination of deep-fried Brussels sprouts, fresh red cabbage, chicken breast slices and hazelnut slices in an orange-mustard dressing. This gastronomic experience will force you to take a fresh look at the usual ingredients. The menu has a lot of different meats: from roe deer medallions, goat legs and Australian tenderloin to Bavarian and Cologne sausages. Duck is served with soba, spring rolls, casserole, or simply duck breast with ginger-mango sauce. Burgers for every taste: with rabbit, potatoes, shrimp, egg and bacon, lamb, Baku tomatoes and cheese. Fish is also prepared mainly in josper — dorada, salmon, Chilean sea bass, halibut, walleye, as well as carp cutlets, lobster and baby squid. You can drink refreshing lemonades or warming infjns (tea without tea) with ginger, cranberries and raspberries, mint, chamomile. And what milk-shakes are here! What is a caramel milk shake with a salty cracker-a drink and a dessert in one glass.

The menu is created by the whole team, then all the ideas are brought together and worked out by chef Oleg Petrichenko, who came to Cheapside from Kinki. The team is still working on the overall concept, they say there is no limit to perfection. The restaurant itself is small, with just over 50 seats. Panoramic windows offer views of the bustling Forest Street and the quiet courtyard of the shopping center, you can watch the work of chefs and bartenders in the open kitchen. The courteous attentive staff and quick service complete the pleasant experience of this place, and some menu items can now be repeated at home. Success is assured!

SPRING ROLLS WITH DUCK AND MUSHROOMS

Ingredients for 4 servings:

1 pack of rice paper (in mugs) or wheat dough for spring rolls (filo dough is also suitable)

2 duck breasts

150 g shiitake

1/4 onion

2-3 green onion feathers

1-2 tbsp butter for frying

vegetable oil for deep frying

for the sauce:

100 g of tangerine pulp

100 g coriander

100g chipotle sauce

30 ml soy sauce

Cooking method:

  1. Wash the duck breast and finely chop it. Also finely chop the mushrooms, onions and green onions. Mix all the chopped ingredients and fry in butter until golden brown and fully cooked.
  2. Meanwhile, prepare the sauce. To do this, finely chop the tangerine and coriander, mix with the chipotle sauce and soy sauce.
  3. Dip the rice paper sheets in hot water for a few seconds, they should become a little softer, but do not overdo it, otherwise it will be inconvenient to work. Place it on the board and unfold it. In the center, place about a tablespoon of the filling lengthwise and wrap in a tight roll. Wheat or filo dough should be pre-thawed, then wrapped in the filling.
  4. Heat the vegetable oil in a small saucepan, it needs so much that the rolls are completely covered. Gently fry the rolls in small portions for about 2 minutes until golden brown. Serve immediately with the tangerine sauce.

WINGS WITH GREENS

Ingredients for 4 servings:

1 kg of chicken wings (can be halved with legs)

50 g coriander

10 g garlic

10 ml lime juice

15 ml sunflower or olive oil + a little for frying

salt, pepper

Cooking method:

  1. Divide the wings into two parts at the joint, season with salt and pepper and leave to soak a little. Then fry in a well-heated frying pan in vegetable oil until golden brown and fully cooked.
  2. Meanwhile, finely chop the coriander and garlic, mix with the lime juice and oil. Add the wings to this mixture, mix well and serve immediately.

 

IRISH BURGER WITH FRIED POTATOES

Ingredients for 4 servings:

250 g ground beef

60 g of bone marrow or any fat (finely chopped)

4 burger buns

1/4 head iceberg lettuce

50 g pickled cucumbers

4 eggs

30g thinly sliced bacon

1/2 red onion

1-2 tomatoes

1/2 onion

ketchup and mayonnaise to taste (for sauce)

vegetable oil for frying

salt, pepper

for garnish:

400 g small new potatoes

 2 garlic cloves

a bunch of any greens

salt

Cooking method:

  1. Boil the potatoes almost until tender, dry them and cut them in half lengthwise. Cut the salad coarsely with your hands into pieces according to the size of the bun. Cut cucumbers, tomatoes and red onions into thin slices. Mix the ketchup with mayonnaise to taste.
  2. Mix the ground beef with the fat, salt and pepper. Carefully knead and form the resulting mass into small cutlets the size of buns. Fry in vegetable oil until tender, but do not overdo it. Let the cutlets be slightly pinkish in the middle, remove them from the heat and let them rest a little.
  3. Meanwhile, cut the onion into thin rings and fry in a very hot frying pan in a large amount of vegetable oil until golden brown. At the end, add salt, transfer to a paper towel and blot out excess oil. In the same oil, fry the boiled potatoes until golden brown and crisp. At the end, add the garlic, herbs, mix and immediately remove from the heat.
  4. Separately fry the bacon in a dry pan until crisp. Then, in the same pan, fry the egg frosting in the remaining fat — one for each burger.
  5. Now collect the burgers. Brush one half of the bun with the sauce, put a lettuce leaf on top and also brush it with the sauce. Then lay the cucumber slices, cutlet, fried eggs, bacon and sprinkle with fried onions. The second half of the bun is lightly smeared with sauce, put the tomatoes and red onions. Serve in the open form with potato slices — this will be more effective.
