What kind of meat to buy for jelly / jellied meat?

For jellies (jellies), they usually take a mix of different types of meat – such jellied meat will definitely solidify itself and will have a deep pleasant taste. Less often they focus on one type of meat – as a rule, on noble – soft beef or even more delicious horse or elk meat.
