What is pullulan?

The substance is harmless to human health based on many toxicological and mutagenic studies. The energy value of pullulan is determined at the level of approx. 2,1 kcal / gwhich is half that of carbohydrates. Pullulan has been designated as a food additive E1204. Until now, it is used to a minor extent, mainly as a coating for tablets and capsules of supplements, and also as a component of breath freshening sheets. However, its maximum consumption is 2,3 g / day.

Does pullulan harm your health?

Considering its harmless health effects, a lot of research is being done in the world on its use and properties. On their basis, it was found that its participation in the diet may be helpful for diabetics and obese people. It slows down the rate of increase and decrease in blood sugar levels. What is related to, among others with reduction of hunger pangs. The conducted experiments prove that pullulan also shows prebiotic effectand thus supports the development of normal bacterial microflora of the gastrointestinal tract.

Fruits coated with pullulan stand out significantlya slower rate of deterioration, oxidation of organic compounds and less weight loss. Similar observations were made in the research using pullulan as a coating for nuts or meat. These products also retained the desired organoleptic characteristics for longer.

Pullulan shows action forthickening, stabilizing and protectiveand its small addition increases the viscosity of the product. From the manufacturers’ point of view, it seems to be an excellent addition to, among others, ready-made pastes and sauces. Its application is also believed to reduce the calorific value of cereal and confectionery products. In the future, we can therefore expect that pullulan will be used in food production to a much greater extent than before.
