What if the mushrooms are swollen?
Swelling of honey agaric occurs due to violation of the rules of pickling and rolling and the multiplication of bacteria – so active that it causes strong pressure on the lid. If this phenomenon, called “bombing” in the villages, happened a few hours after conservation, the marinade is transparent and the smell is pleasant, then the situation is fixable. Prepare new jars, wash them thoroughly under running water and sterilize in a way that is convenient for you (in the oven or on a kettle). While the jars are sterilizing, boil the lids in boiling water for 3 minutes. Transfer the mushrooms to a colander and rinse well, you can boil honey mushrooms again. Prepare a fresh marinade in a saucepan and boil mushrooms in it for 10 minutes. Next, transfer them to sterilized jars, fill with marinade and tightly roll up the lids, making sure that there are no gaps left through which air can enter.
If a day has passed since the mushrooms were swollen, then it is better to throw them away so as not to cause irreparable harm to health. Even if a little time has passed, and the marinade has become cloudy, it means that the “bombardment” of the cans has led to the mushrooms deteriorating.
