Such starch acts as a prebiotic – it helps nourish beneficial bacteria in the intestines. It also increases the production of short-chain fatty acids such as butyric acid, lowers sugar levels after dietary hyperglycemia, improves cell insulin sensitivity, lowers blood cholesterol levels, and promotes earlier satiety. Therefore, products containing it can be used for weight loss.
There is a nuance: resistant starch is formed in cooked and then cooled starch-containing products. That is, it is much healthier to eat chilled pasta as part of a salad than a portion of freshly cooked hot pasta.
However, durum pasta contains much higher amounts of gluten than soft wheat pasta.
