Cheesecakes that are cooked in an oven or slow cooker sometimes fall short and frustrate us with big or small cracks. No longer will you have to frantically come up with a decor for a crack-gaping cheesecake or calm yourself down, they say, it will do.
Confectioner Larisa Trotsyuk came up with a good way to save delicate baked goods from cottage cheese, helping to patch up all the cracks.
You need to prepare a cream based on 33% cream. They will need 50g, add 25g. powdered sugar and 75 gr. cream cheese. Beat the cream until a dense mass is obtained and smooth the surface of the cheesecake with it. This amount of cream is enough for a cheesecake with a diameter of 21 cm.
After the cracks have been patched, wrap the cheesecake pan in several layers of foil and bake in a deep baking sheet filled with hot water.
As a result, the finished hot cheesecake has a dense consistency at the edges, and still shudders in the middle. After complete cooling, the mass acquires a homogeneous texture. And pleases with a perfectly flat surface.
