Next, cook the watermelon rind with sugar over medium heat for 20 minutes, add the lemon, chopped with the rind, and cook for another 5 minutes. Let the mixture steep for 4 hours, then bring the jam to a boil again and boil for another 15 minutes. Place in sterilized jars and cover with lids.

For five kilograms of watermelon or melon rinds, you need one kilogram of sugar and one lemon. Cut off the skin from the crusts and cut the light part into cubes. Dip in boiling water with two tablespoons of lemon juice for five minutes. Throw in a colander, pour over with cold water and pat dry.

Boil a syrup with 750 grams of sugar and 0,5 liters of water. Pour the mixture over the watermelon peels, bring to a boil and simmer for 10 minutes. Let it brew overnight and repeat the cooking procedure twice more. For the third time, add 2 tablespoons of lemon juice. Throw the finished mixture in a colander and let the liquid drain. Preheat the oven to 40 ° C and bake future candied fruits in it for an hour. After taking out, sprinkle with sugar, leave to dry for three days and enjoy the delicacy.
