Black beans contain proteins that act as antioxidants, help lower blood pressure, remove toxic metals from the body, according to a study conducted by scientists at the Mexican National Polytechnic Institute. The results were awarded the National Nutrition Science and Technology Award in the Nutrition Science Business Category. The researchers crushed dried black beans and isolated and hydrolyzed the two main proteins: bean and lectin. After that, the proteins were tested using computer simulations. They found that both proteins exhibit chelating ability, which means that the proteins remove heavy metals from the body. In addition, when the proteins were hydrolyzed with pepsin, their antioxidant and hypotensive activity was found. Black bean proteins have special biological properties and nutrients that help lower glucose, cholesterol and triglyceride levels. Beans are at the heart of many cuisines around the world. One cup of boiled black beans contains: from the recommended daily dose, iron – 20%, , , , , . Clinical trials have shown that eating beans (canned or dried) lowers total and “bad” cholesterol, as well as triglycerides. A study by the Colorado State University, Department of Soil and Field Sciences found that antioxidant content is associated with the dark color of the bean hull, as this pigment is produced by antioxidant phytonutrients such as phenols and anthocyanins.
