Sometimes we complain about memory problems, but before we get upset, let’s think about how many miracles have happened thanks to this annoying property: forgetting.
At the beginning of the XNUMXth century, an English lord arrived in Worcester and ordered two local pharmacists — Lee and Perrin — to make an outlandish sauce according to a recipe that had just been brought from India. The Lord was going to establish the production of sauce in Britain, but no matter how hard the pharmacists tried, the mixture did not come in line with the Indian original.
After a number of attempts, the idea was forgotten, as was the jar with an unsuccessful solution. However, a few months later she caught my eye, and — lo and behold! It turned out that the content had been transformed into an exceptional quality new product. It was then that Lee and Perrin made a fuss and, without any lord, set up the production of bottles with a dark mixture, which forever inscribed Lea & Perrins themselves and their hometown in history.
Worcestershire (also called Worcestershire) sauce is quite hot and sour — it’s more of a condiment for meat, fish or vegetables than a full-fledged sauce that can be eaten on its own. Without Worcester sauce, neither Bloody Mary nor Caesar salad is inconceivable — and what can we say, nor the whole British cuisine …
Meanwhile, across the ocean, an absent-minded American housewife forgot to put baking powder in her chocolate muffin. Woe, the dough didn’t rise, but the dense and moist layer of super chocolate cake and the cracked crust happily surprised the guests. In addition, freshly baked brownies can be easily cut into squares — it is convenient to eat with your hands.
According to one legend, this is how the most popular delicacy in the United States was born today. The name brownie comes from the English brown — brown. It differs from chocolate pies by its dense superchocolate interior and dry, cracked crust.
Classic American Brownie
Preheat oven to 180°C. Melt the butter in a saucepan and cook, stirring, until it becomes transparent and acquires a brown hue and a caramel smell (if the butter burns a little, strain). Pour in chocolate and stir. Mix eggs with sugar, coffee, salt, vanilla and beat in a mixer for about 7 minutes until thick foam. Add flour and cocoa, mix until smooth and pour in the butter mixture. The dough will be quite liquid. Line a rectangular shape about 20 by 30 centimeters with foil, pour the dough and put in the oven for 30 minutes.
Salmon with Worcestershire sauce
Cut the salmon fillet to the skin with diamonds 2-3 centimeters. Beat honey, mustard, Worcestershire and soy sauces, vegetable oil until emulsified. Apply the marinade to the fish and wait half an hour. Sprinkle with sesame seeds. Put the fillets on a ceramic dish — you can use a cake pan or an empty wine bottle wrapped in foil as a stand. The fillet should “bend” and the cuts should open up. Bake at 220°C until golden, 11-15 minutes.
