Try making variations on your favorite French dishes – it won’t take long, but it’s so much fun!
A hot evening
6 servings, cooking time – 1 hour 40 minutes.
Ingredients:
250 g flour;
120 g butter;
1 egg;
6 st. l. cold water;
1 a pinch of salt;
150 g not very fatty bacon;
1 squash;
1 bulb;
200 g champignons;
1–2 tbsp. l. butter;
3 large eggs;
180 ml cream 30%;
pinch of sugar;
a pinch of grated nutmeg;
salt, freshly ground black pepper.
Recipe
Prepare the dough. Coarsely grate the chilled butter or cut into cubes. Rub the flour with the butter with your fingertips until crumbs form.
Add eggs and salt to crumbs. Gradually add cold water and quickly knead an elastic dough. Shape the dough into a ball, wrap in cling film and refrigerate for 15-20 minutes.
Take the dough out of the refrigerator and roll it out with a rolling pin to a thickness of 5 mm.
Using a rolling pin, carefully transfer the dough into a baking dish with a diameter of 26-28 cm (with removable walls, otherwise you will have to cut the finished quiche right in the form). Press the dough to the edges of the form, form the sides. Cut off the excess dough. Prick the entire surface of the dough with a fork. Put the mold in the freezer for 15-20 minutes.
At this time, prepare the filling. Toast the diced bacon in a dry frying pan for 5 minutes. until golden. Place on paper towel to absorb excess oil.
Chop the onion, cut the zucchini into small cubes, the mushrooms into slices. Stew vegetables and mushrooms in butter for 10-12 minutes. Add bacon.
Take the mold out of the freezer. Put a sheet of parchment into the form with the dough and fill it tightly with dry beans or peas. Place the mold in an oven preheated to 180 ° C and bake for 15 minutes. Remove the form from the oven, pour the beans or peas out of the cake (they can then be safely used for cooking), remove the parchment paper and place in the oven again for 10 minutes.
Spread the vegetable and bacon mixture over the dough. Whisk eggs and cream in a bowl, add nutmeg, salt, pepper and sugar. Pour the resulting mixture onto the dough.
Bake the quiche in an oven preheated to 180 ˚C for 20-25 minutes until golden brown.
Plum clafoutis with pistachios
6 servings, preparation time – 30 minutes.
Ingredients:
300 g of plums;
50 g flour;
6 eggs;
100 g pistachios;
200 ml 0,5% milk;
50 grams of sugar;
10 g of butter.
Recipe
Beat eggs with sugar until fluffy.
Add the sifted flour, milk, beat again, then mix the pistachios ground in a blender into the flour.
Lubricate the mold with butter.
Put the halves of the plums on the bottom and fill them with dough.
Bake for 25 minutes in an oven preheated to 200°C.
Cool and serve.
Nisuaz Salad
4 servings, preparation time – 20 minutes.
Ingredients:
cob salad (for example, escarole salad);
4 the tomato;
Boiled egg xnum;
3 large young onions;
8 anchovy fillets in oil;
½ large red sweet pepper;
200 g green string beans;
8 small olives;
150 g tuna in oil;
2 tsp lemon juice;
1 garlic clove;
1 tsp olive oil.
For the filling:
1 Art. liter. olive oil;
1 garlic clove;
7-8 basil leaves;
1,5 Art. l wine vinegar;
1 tsp lemon juice;
salt to taste.
Recipe
Boil the beans in plenty of salted water for 5 minutes, drain in a colander and pour over with cold water.
Prepare the dressing by mixing all of the above ingredients.
Wash lettuce and separate into leaves. Cut the tomatoes into 4 pieces. Chop the onion. Peel the sweet pepper and cut into thin slices.
Peel the eggs and cut into quarters.
In a salad bowl that expands upward, lay out: a layer of lettuce, a layer of onions, a layer of tomatoes, beans and peppers. Repeat layers several times. Fill with sauce. Before serving, top the salad with tuna, quartered eggs, olives and anchovies.
