Unusual herring snacks – 3 recipes

Russian vodka, black bread, herring… Well, what kind of feast is this with vodka and without herring? But the “fur coat” somehow became boring, salads do not seem to be a serious undertaking, but eating is simple, without any fuss, already tired. And if so, then it’s time to go through the lesser-known herring snacks.

Some of these appetizers will certainly go well with vodka, while others will serve as an addition to a glass of light beer. Interestingly, for many, herring remains a fish for the festive table and is rarely perceived as an integral product for complex dishes (of course, we are not talking about such a classic as a herring in a fur coat).

We will consider recipes for herring snacks, both cold and hot. For some recipes, ready-made herring fillets from cans are suitable, for others it is better to take a whole fish and cut it yourself.

Tartlets with herring mousse

The original recipe uses slightly salted Norwegian herring and ready-made puff tartlets as the main ingredient. If it turned out to be difficult to find these products, they can always be replaced with ordinary, not too salty herring and the simplest tartlets.

  • herring fillet – 200-250 gr
  • homemade cottage cheese – about 200 gr
  • eggs – 2 pcs.
  • sour cream – 3 tbsp. l
  • dill
  • tartalettes

Boil the eggs, then separate the yolks from the whites. We pass 4/5 herring fillets through a meat grinder along with cottage cheese, add two boiled yolks and sour cream. Put the resulting mousse into tartlets. Cut 1/5 herring fillet into small pieces and decorate the resulting herring snack; gently insert a small sprig of dill on top.

Herring skewers

Kebabs in our country are most often made from red fish, but few will deny that almost any fish can be cooked deliciously.

  • 2 fresh herring (4 medium fillets)
  • lemon – 1 pcs.
  • vegetable oil
  • salt, pepper, spices

Despite the fact that this herring appetizer is called kebab, it is still cooked at home, in a frying pan. If you have a whole herring available, then you will have to separate the fillets yourself (at the end of the article there will be a video on how to do this quickly, simply and efficiently). Skewers are prepared on small wooden skewers, which must first be soaked in cold water for 15-20 minutes. The width of the fillet strip can be made different, if the herring is large, then each fillet can be cut lengthwise into two parts.

We put the resulting pieces in a deep plate, rub with salt, pepper and other spices to taste, pour over the juice of one lemon; It is not worth marinating the fish strongly, ten to fifteen minutes is enough. Then we put the herring on wooden skewers and put it on preheated oil in a frying pan. Grill the skewers for a few minutes on each side. Serve with sauces, lettuce, herbs.

Potato baskets with herring

  • potatoes – 5-7 medium
  • eggs – 4 pcs
  • herring (salted), fillet – 150 gr
  • cheese – 50-70 gr
  • green onions
  • mayonnaise
  • greenery
  1. Baskets. We clean the potatoes, three on a grater, add one egg and mix well until smooth (as far as possible). We heat the oven to 200 degrees. Next, put the mass into muffin molds, while forming baskets (you can put a little more potato mass on the bottom, but it is better to make the sides thin enough). We send the blanks to the oven and keep them there until the potatoes turn golden.
  2. Filling. Grate boiled eggs and cheese; cut herring fillet into small cubes. Mix herring, eggs and cheese, season with mayonnaise; add finely chopped green onions and greens there.
  3. We spread the filling in ready-made baskets, decorate as you wish.

Recipes for fish appetizers, and in particular herring appetizers, are so diverse that it would take a lot of articles to describe at least some of them. I plan to pay special attention in future articles to red fish appetizers, both cold and hot. Bon appetit and see you soon!
