Sevillian gastronomy has a great influence not only on Andalusian cuisine, but also on Spanish

1. Gazpacho
Gazpacho is one of the most typical dishes of Seville, especially in the summer months. It is a cold soup made with numerous vegetables. And, its main ingredients are tomato, pepper (red or green), cucumber, garlic and, of course, bread.
2. Fried Pescaito
Another of the most typical dishes of Seville, and of Andalusia in general, is fried fish, which is made by means of small fish such as red mullet, chanquete, mackerel, anchovy or acedías.
3. Little Soldiers of Pavia
The soldiers of Pavia are strips of cod soaked and battered with flour, and fried. Depending on the restaurant or bar where you order them, they may also have been marinated for about an hour before frying, with lemon juice, olive oil and agauardiente.
4. Dogfish in Adobo
Although it is not as well known as gazpacho or fried fish, there are few dishes more classic than this in Seville.
It is made very easily: first, a soft meat fish is marinated with different species. Next, it is passed through flour and, to finish, it is fried with plenty of oil.
5. Andalusian stew
The stew is one of the most typical dishes of the Spanish territory. However, in each area it is made in a different way. However, if the different Spanish stews have something in common, it is their forcefulness.
Also known as “Andalusian stew”, in Seville, the cocido, or vegetable stew, is made mainly with chickpeas and beans. And, to these ingredients others are added such as bacon, ribs or beef black pudding.
6. Cod with tomato

7. Flamenco eggs
And, to finish, we are left with the flamenco eggs. Although this dish is made in very different ways, it is basically a recipe for eggs with vegetables, presented in a clay pot (or, at least, that is how the more traditional restaurants serve them).
And, as for its ingredients, in addition to fried eggs, this dish is made with asparagus, peas, chorizo or ham and artichokes or peppers.
