Perfectly cooked trout steak with exquisite sauce is a great choice for a festive menu. By strictly following this recipe, you will create a culinary masterpiece like a real restaurant chef and receive a lot of compliments.

Tender trout steaks with spicy sour cream sauce

Ingredients: – 2 trout steaks, 300-350 g each; – 2 oranges; – 4 tablespoons Sahara; – 2 tbsp. salt; – 2 pinches of ground black pepper; – vegetable oil; For the sauce: – 3 tbsp. sour cream; – 1,5 tbsp. fresh orange juice; – 1,5 tsp grated horseradish; – 20 g of dill; – salt.

Pre-wash the oranges with hot water using a brush or the hard side of a dish sponge. This will leave waxy inedible substances and a significant part of the bitterness.

Wash the trout steaks and pat dry with a paper towel. Remove the zest from the prepared oranges using a fine grater. Mix it with salt, sugar and black pepper. Rub the fish thoroughly with the mixture, transfer it to a container and refrigerate for an hour. Then take it out, rinse it under running water, fold it in a colander and dry it. Preheat your grill or skillet. In the second case, sprinkle the dishes with vegetable oil. Fry the trout pieces, one at a time, no more than 40-50 seconds on each side, they should be half cooked.

Preheat oven to 200 ° C. Prepare two sheets of foil or two disposable baking tins. Place the steaks in them and drizzle with the fat generated by frying in a pan or grilling. Wrap the foil wraps hermetically, or cover the molds tightly with a lid and bake for 8 minutes. In the meantime, make the sauce. To do this, squeeze the juice from fresh orange pulp, combine it with sour cream and horseradish and add 0,5 tsp. salt. Chop the dill, stir into the mixture and beat with a broom.

Trout steaks: serving option # 1

– 1 tsp green olive oil; – 2 lettuce leaves; – 4 thin slices of lemon; – 6 pitted olives; – 6 red cherry tomatoes; – a few basil leaves.

Heat two wide plates and drip olive oil onto them. Spread lettuce in each dish and place the trout. Pour the sauce over half of the steaks. On the side of the other halves, where the sour cream mixture is not glass, put 2 lemon mugs, and on them – 3 olives. Place 3 cherry tomatoes and basil leaves at the “foot” of the steaks.

Trout steaks: serving option # 2

– 1 fresh cucumber; – 1 small ripe avocado; – 2 thin slices of lemon of large diameter; – 4 sprigs of dill; – 2 mini gravy boats.

Peel the cucumber and cut into longitudinal slices. Peel the avocado, slice it lengthwise, remove the pit, and cut into wedges. Arrange the steaks at the very edge of the plates, and arrange the pieces of vegetable, fruit and dill sprigs beautifully on the clean side of the dish. Cut up lemon circles, coil them up and decorate the fish. Pour the sour cream sauce into mini sauce boats and place next to the plates when serving.
