The season is already open, and instead of buying ready-made corn, you can cook it yourself. The main thing is to follow just a few rules.
Boiled corn is one of the main summer dishes on the table, which is enjoyed not only by children, but also by adults. A wide variety of cobs are sold in the market or in the store. To make the corn soft and juicy when boiled, the first step is choosing the right one.
How to choose corn?
Fresh and juicy corn is sold exclusively during the season, which lasts until around the end of August. When choosing a fruit on the counter, you should pay attention to its appearance. Great for boiling ears with pale yellow or milky white kernels. At the same time, they should look as if they are bulk, liquid that resembles milk can ooze inside them.
If the kernels are dry and dented, this means old corn. Its leaves also indicate this. If they are far away from the fruit and look dry and yellow, then such an ear is not worth buying. In general, it is better to take the fruit with leaves, rather than without. To assess the condition of the grains, it is enough to just slightly open it.
Preparation for cooking
Rinse the ears with running water and remove any dirty leaves, if any. It is not necessary to completely remove the leaves from the corn. You can also cook with them. Before boiling, it is worth soaking the cobs for about an hour. This will make the corn even softer. If the fruit is too large, cut it in half. It is important that they are completely covered with water in the pan.
If you did buy an old one
When you realize that you are not at all a young fetus, there is an ideal way to make it soft. To do this, before cooking, it is necessary to clean the corn of leaves, fibers and soak in a mixture of milk and water for about 4 hours. After that, the fruits can be cooked in the usual way.
How and how much to cook corn
It takes only 20-30 minutes to boil young ears. Ripe corn should be boiled for 20 minutes longer. If we are talking about old fruits, then the cooking time can be increased up to 3 hours. It is very important not to overcook the corn, otherwise you may end up with not soft, but hard fruit – check the grains for softness every 15 minutes.
It is worth choosing a cast iron pot with a tight-fitting lid. You need to dip the corn into boiling water. After boiling, the fire must be made small. It is highly discouraged to salt the fruits during cooking, otherwise the grains will harden. It is better to do this either 5 minutes before cooking, or after removing it completely.
You can add a little sugar and butter to the pot to add a delicate flavor to the corn.
