How to brew classic Kalmyk tea

Products

Kalmyk tea-brick (can be replaced with a mixture of black and green tea) – 3 tablespoons

Milk (preferably homemade) – 1 liter

Butter – 1 cube (to taste)

Water – 1 liter

White or black ground pepper – a pinch

Nutmeg – pinch

Bay leaf – 1 leaf

Salt – pinch

How to brew classic Kalmyk tea

1. Pour a liter of water into a saucepan.

2. Cut off Kalmyk tea, divide it slightly, boil over medium heat.

3. Pour pepper, nutmeg, bay leaf, a pinch of salt into boiling tea.

4. Constantly stirring, pour in milk in a thin stream, let the tea boil again, reduce heat to low.

5. Saturate the tea with oxygen – scoop the tea from the bottom of the pan with a ladle, raise the ladle with tea to a height of about 10 centimeters, pour the tea from the ladle into the pan in a thin stream, repeat the procedure 20-30 times.

6. Remove the tea from the burner, if desired, strain through a strainer.

7. Serve Kalmyk tea hot.

 

Delicious facts

– Kalmyk tea was invented in order to relieve the heat in areas with dry weather. Kalmyk tea promotes perspiration. But in hot regions with humid air, Kalmyk tea is practically useless. In cold weather, Kalmyk tea can warm you up.

– Kalmyk tea can be drunk as an energy drink, then for strength it can be boiled for 2-3 minutes longer.

– To intensify the brewing intensity, crushed tea can be additionally pounded.

– By tradition, all movements when brewing Kalmyk tea should be done clockwise.

– Kalmyk tea is good in the heat and as a nutritious drink in the absence of appetite. Due to butter, salt and homemade milk, Kalmyk tea will satisfy hunger and raise the tone.

– The price of Kalmyk tea when buying in specialized stores is from 350 rubles / 200 grams (on average in Moscow as of June 2019).

– Serve Kalmyk tea with fresh cakes, goat cheese, for nutritional value during cooking, add fried flour, millet or rice to the tea.

Black tea – 2 grams (bag)

Green tea – 2 grams (sachet)

Milk – 0,7 liters

Water – 1 liter

Sugar – 70 grams

Salt – 7-10 grams

Butter – 30 grams

How to brew sweet Kalmyk tea

1. Pour a liter of water into a saucepan.

2. Pour black and green teas into the water in a saucepan, boil over medium heat.

3. Put salt, sugar in boiling tea, stir for a minute to dissolve them.

4. Constantly stirring, pour in milk in a thin stream, let the tea boil again, immediately remove from the burner – do not boil the tea after adding milk.

5. Put a piece of butter in tea, dissolve it, stirring it.

6. If desired, strain the tea through a strainer.

7. Serve the tea immediately hot until the fat is frozen on top.
