Method of preparation
Sauerkraut is finely chopped and stewed (page 61) with the addition of tomato puree and pig bones 3-4 hours. Cut carrots into small cubes, finely chop the onion and sauté. Stewed cabbage, sauteed vegetables are placed in boiling broth or water and cooked until tender. 5-10 minutes before the end of cooking, add browned flour diluted with broth or water, salt, spices. Ready-made cabbage soup is seasoned with garlic, ground with salt. Cabbage soup can be prepared with meat and other meat products. When cooking cabbage soup with pork head, the fat rate is reduced (page 53).
