Making waffles is very simple – mix all the ingredients into a homogeneous dough and bake. However, there are several life hacks that will make your waffles the most delicious:
- All ingredients should be at room temperature, and the butter should be melted and cooled beforehand.
- Don’t substitute butter with margarine or spread. The better and more natural the products are, the tastier the waffles will be.
- The use of yolks and butter in the dough will make the waffles soft and tender, and with the addition of whipped proteins, they will turn out to be crispy.
- The crunchy texture is also provided by the addition of starch in a 1: 1 ratio with flour.
- If, instead of sugar, you add powdered sugar to the dough, the finished products will not stick to the waffle iron.
- Use water, milk, kefir, cream as liquid ingredients.
- If you want to get fluffy waffles, use soda, which will replace yeast.
- Be sure to sift the flour – so the waffles will be light and airy.
- Wafers will taste more interesting if part of the wheat flour is replaced with flour of other varieties – corn, rice, almond, bird cherry, buckwheat, oatmeal.
- If the dough contains oil, and the waffle iron has a non-stick coating, you do not need to lubricate it additionally. Just preheat the waffle iron before using.
- The dough should be moderately liquid and resemble sour cream in density.
- Bake crispy thin waffles for 30-40 seconds, fluffy waffles for 2-3 minutes.
- It is better for thin waffles to immediately give the desired shape of a tube or cone, cooling down, they become more brittle.
- Do not stack the waffles while hot – they quickly damp, stick together and lose their crispy texture.
- Fill the waffles with the filling just before serving, otherwise they will get wet and lose their appetizing appearance.
