The Kitchen Olympics are here

Since 1996 International cuisine has also had its Olympic Games, which this year have the participation of the Spanish team.

The German city of Erfurt is the headquarters of this year 2016 of the popularly known as Cooking Olympics (IKA Culinary Olympics).

On October 22, 23, 24 and 25, the small German city will be a bridge between the culinary cultures of the five continents with the participation of fifty countries through their national teams.

The Cooking Olympics, is a global competition organized every four years by the Association of National Chefs of Germany and the World Association of Chefs Associations (World Chefs), and the main novelty for us is the launch of this gastronomic event of the Spanish Selection of Professional Cuisine, known as La Roja de la Cocina.

The competition consists of a culinary preparation of three parts, for each of the two different tests into which they are divided, one for food and another for pastries:

  • The first is the composition of a buffet, where the Culinary art It is the key piece for the valuation, in it four different types of food are made. “finger food” for six diners, a festive cold buffet platter for eight people, three different starters for one diner and a festive menu for one person (based on five dishes including dessert).
  • The second is the Test of Pastry Art, and is based on the elaboration of desserts in individual portions, developing 54 different varieties, one with chocolate as the main ingredient, another with fruit as the main ingredient and two of free choice. Along with the above, four caramel, chocolate and petit fours dishes should also be developed for six people, with the special condition of making them weighing between 6 and 14 grams.

Some interesting data about volumes and utensils, which the organizers of the event have presented to us, are the elaboration of 7.000 fresh menus, where more than 9.000 pieces of cutlery, 10.000 pieces of porcelain and approximately 12.900 napkins were used.

Regarding the products, 20.000 eggs, 1.000 kg of meat, 1.200 kilos of fish, 700 kilos of potatoes are part of this macro event of international cuisine that brings together the best chefs from each country.

The Premiere of La Roja at the Kitchen Olympics

Our Red, will compete in each of the disciplines that are developed in the gastronomy and cooking event, against the Regional Teams of various nationalities.

The team is made up of a captain, four chefs (including a pastry chef) and five assistants. In total, ten culinary professionals where their skills and abilities will be their best value to try to win the title of champions of this edition.

The participation of the Spanish kitchen team will be on October 23 from 9.00:17.00 a.m. to XNUMX:XNUMX p.m. The line-up that we will present will be composed of:

  • Javier Cabrera, from the Els Brancs restaurant in Roses, as director and gastronomic advisor.
  • Carlos Durán Charlie Champagne Restaurant as captain.
  • Rafael Arroyo, from the El Claustro Restaurant in Granada; Javier Andrade, from Els Branvs Restaurant; Nicolas Sanchez Girl of the Restaurant La Milagrosa in Granada and Jose Miguel Sanchez from the Sustraiak restaurant in Bilbao, as main chefs.

Daniel García Peinado, from the Alamar restaurant; Federico Guajardo from the Hotel Los Ángeles in Denia; Javier Chozas from the Toledo School of Hospitality; Fran Segura from Pastry Fran Segura Chocolab and Adolfo Romero, ice cream master at Helados Romero, as assistants.
