Broken egg croquettes with potatoes
Ingredients: Onion, breadcrumbs, oil, flour, milk, salt, potato, butter and eggs
Preparation:
– For the béchamel, start by browning the onion with a little butter in a saucepan, add the flour and continue to stir until it is browned (without burning) and then add the milk little by little and continue stirring until it remains its point “not too liquid, not too thick.”
– Cut the potatoes into cubes and fry. Also fry two eggs, which once done we will add to the béchamel together with the potatoes. Mix everything well and begin to make balls with the resulting dough.
– Pass each ball first by egg and then by breadcrumbs, before frying in a frying pan with plenty of oil.
