Even the ancient Roman poet Marcial wrote about the benefits of leeks, which “drives away all pains from the stomach.” Leek increases appetite, improves liver and gallbladder function. With long-term storage, the amount of vitamin C contained in it does not decrease, therefore it is recommended to include leeks in the diet in spring, when the lack of vitamins is especially noticeable. It has a delicate and delicate flavor and is suitable for making soups, salads, pies and vegetable stews.

Leek and Crispy Toast Soup Recipe
Onion soup is a very popular national dish in French cuisine. For its preparation, use ordinary onions and leeks. To cook onion soup, you need to take:
– 500 grams of leeks; – 1 head of onion; – 50 milliliters of vegetable oil; – 100 grams of butter; – 5 grams of thyme; – 200 milliliters of dry white wine; – 2 liters of chicken broth; – 2 grams of nutmeg; – 50 milliliters of Demi Glass sauce; – 4 slices of wheat bread for toast; – 100 grams of emmental cheese; – parsley; – ground black pepper; – salt.
Cut off the dark green stem from the leek (it won’t come in handy). Wash the white stem thoroughly, dry and cut into thin rings. Peel the onions and chop finely.
It is recommended to use olive oil for the onion soup. The thick brown Demi Glass sauce takes about 30 hours to cook, but you can replace it with concentrated beef broth or make the soup without it.
Pour vegetable oil into a large saucepan, add butter and save onion. Add a sprig of thyme about halfway through this process. Then pour white dry wine into a saucepan with onions and evaporate it over low heat.
When the onion is very soft, pour over the unsalted chicken broth and cook the soup with ground nutmeg, salt, pepper and Demi Glass for 20-30 minutes.
Place thin slices of emmental cheese on white bread slices and grill or oven toast.
Before serving, pour the soup into bowls, carefully place the croutons with cheese on top and sprinkle with finely chopped parsley.
Leek and Chicken Giblets Pie Recipe
To make a delicious and healthy pie with leeks and chicken giblets, you will need:
– 250 grams of leeks; – 50 grams of butter; – 200 grams of chicken giblets; – 2 eggs; – 30 grams of Dijon mustard; – 100 grams of parmesan cheese; – 200 grams of puff pastry; – ground black pepper; – salt.
Rinse chicken giblets (heart, liver, ventricles), peel off films if necessary and cut into small pieces.
Young leaves of leeks are eaten whole, with age they coarse, and only the white part of the stem, which is traditionally called a bulb, is used for cooking (although it does not look like it at all)
Rinse the leek well, dry it, cut into rings and fry in butter. Add the processed chicken giblets and cook until tender. Season with salt and pepper.
Combine raw eggs with mustard and grated Parmesan, pour over the giblets with this mixture and stir.
Grease a baking dish with a little butter and line the bottom and sides with rolled puff pastry. Put the prepared filling of leeks and chicken giblets on the dough and place the pie in an oven preheated to 160 degrees for 20 minutes.
